GARLIC BUTTER PIZZA CRUST RECIPE BY CHEZ - COOKEATSHARE

Garlic Butter Pizza Crust Recipe by Chez - CookEatShare image

as seen on abeautifulmess.com http://www.abeautifulmess.com/2013/08/garlic-butter-pizza-crust.html

Provided by Chez la mere

Number Of Ingredients 10

1 cup water
1/2 tablespoon sugar
2 1/4 teaspoons active dry yeast
2 cups all purpose flour
1/2 cup whole wheat flour
1 teaspoon fine grain sea salt
1/2 teaspoon dry oregano
1/2 tablespoon olive oil
4 tablespoons butter
1/2 tablespoon garlic salt

Steps:

  • Stir together the water and sugar. Pour the yeast over the water and give it a stir (no need to dissolve it). Let that sit for 5 minutes. It should bubble and get foamy, that means the yeast is alive and working. In a bowl combine the flours, salt and oregano. Pour in the yeast mixture and oil. Stir until a dough ball forms (if you're using a stand mixer use the dough hook attachement). Knead for 5-6 minutes, until the dough becomes elastic-like. Place in a light greased bowl, cover and allow to rise for 1 1/2 hours. Roll out on a lightly floured surface. Place on your baking sheet that has been lightly dusted with flour or cornmeal. Now here's the really important part: melt the butter and stir in the garlic salt. Brush the entire crust with the garlic butter mixture. Now bake at 400°F for 5 minutes. Brush with any remaining garlic butter and add your sauce, cheese and toppings. Bake for an additional 8-10 minutes until the cheese begins to bubble.

THE REAL CHICAGO DEEP DISH PIZZA DOUGH RECIPE | ALLRECIPES
I have it on good authority that this is the real deep dish pizza dough that's used in Chicago. The real thing is nothing like bread, or even pizza, dough. It is a buttery, flaky crust that is achieved by: 1) using corn oil (not butter) and 2) minimal mixing and kneading times. The pizza itself is built with cheese, toppings, and sauce, in that order. I suggest you use 6-in-1® tomatoes which are far superior to other brands. Classico® ground tomatoes are very similar. Contrary to popular opinion, cornmeal is not used in the dough by Chicago pizzerias.

  • Remove from the oven, and let it cool for 5 minutes. Top with tomato sauce, and add your favorite toppings. Going TOO thick on toppings may result in a soggy crust so be careful. Return to the oven and bake for another 8-12 minutes, or until the cheese is melted and begins to brown. Repeat with the second half of dough or store it in your fridge for later!
