Once you "melt" sweet potatoes, you won't want to make them any other way. These roasted sweet potatoes soak up broth to turn the interior into a creamy, melt-in-your-mouth texture. A sage-brown butter sauce finishes these potatoes for a truly stunning side dish.

2 pounds sweet potatoes, peeled and cut into 1-inch slices
2 tablespoons extra-virgin olive oil
¾ teaspoon salt
½ teaspoon ground pepper
½ cup low-sodium vegetable or chicken broth
2 tablespoons unsalted butter
2 tablespoons finely chopped fresh sage

Steps:

  • Position rack in upper third of oven; preheat to 500°F.
  • Toss sweet potatoes, oil, salt and pepper in a large bowl. Arrange in a single layer in a 9-by-13-inch metal baking pan. (Do not use a glass dish, which could shatter.) Roast, flipping once, until browned, 25 to 30 minutes.
  • Carefully add broth to the pan. Continue roasting until most of the liquid is absorbed and the sweet potatoes are very tender, 5 to 8 minutes more.
  • Meanwhile, melt butter in a small skillet over medium-high heat. Cook until just starting to brown, 2 to 3 minutes. Remove from heat. When the butter stops bubbling, stir in sage. Spoon the browned butter mixture over the sweet potatoes before serving.

3 pounds Yukon Gold potatoes, peeled
6 tablespoons butter, melted
1 teaspoon dried thyme
1/2 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon pepper
1 cup chicken broth
2-3 cloves garlic, peeled and crushed
2 tablespoons fresh chopped parsley

Steps:

  • Place oven rack in upper-middle position. Preheat oven to 475 degrees. Spray a large rimmed baking sheet with non-stick cooking spray.
  • In a small bowl, combine melted butter, thyme, rosemary, salt, and pepper.
  • Cut potatoes into 3/4 to 1 inch thick slices, discarding ends. Toss potatoes in butter mixture. Arrange in a single layer on prepared baking sheet.
  • Roast potatoes for 15 minutes. Remove from oven and flip potatoes over. Return to oven and roast for an additional 15 minutes.
  • Remove potatoes from oven and flip one more time. Add the broth and garlic to the pan and carefully return to oven. Roast for an additional 10-15 minutes, or until potatoes are tender. Sprinkle with parsley and serve.

Remove dish from oven, pour in chicken broth and sprinkle with garlic. Return to oven to bake until the potatoes are tender and the stock reduces slightly, about another 15 minutes.
