A touch of sugar makes these flakey crackers equally as tasty with peanut butter as they are with cheese. Look for a fluted edge cookie cutter to make your crackers look like the classic Ritz crackers.

Yield 35 to 45 crackers

Number Of Ingredients 13

1/3 cup (45 grams) white spelt or all-purpose flour
2/3 cup (90 grams) white whole-wheat flour
1/4 cup (30 grams) oat or cake flour
1 1/2 teaspoons baking powder
1 1/2 tablespoons cane sugar
1/2 teaspoon salt
3 tablespoons unsalted butter, chilled and cut into pieces
1 tablespoon flaxseed or olive oil
1/4 cup (2 ounces) ice water, divided
1 egg
1 tablespoon milk
2 tablespoons unsalted butter, melted
1/4 teaspoon salt

Steps:

  • Preheat the oven to 400°F. Line 2 baking sheets with parchment and set aside.
  • Sift the white spelt flour, white whole-wheat flour, oat flour, baking powder, sugar, and salt together. Pour into the bowl of a food processor fitted with the dough blade (or in the bowl of a stand mixer fitted with the paddle attachment). Add the chilled butter and pulse to create a coarse crumb mixture. With the food processor running, stream in the flaxseed oil, followed by the water, 1 tablespoon at a time, until the mixture starts to form large clumps.
  • Turn the dough out onto a well-floured surface and gather it into a ball. Knead gently once or twice. Sprinkle a little more flour on top of the dough and roll it out until it is 1/4 inch thick, rotating the dough by 90 degrees after each roll.
  • Prick the dough all over with a fork, making sure it is well pierced. Using a small cookie cutter of your choice, cut out the crackers and carefully place them on the prepared baking sheets.
  • In a small bowl, lightly whisk the egg with the milk. Using a pastry brush, coat the tops of the crackers with the egg wash.
  • Bake just until the crackers begin to brown, 5 to 10 minutes.
  • While the crackers are baking, stir the melted butter and salt together in a small bowl. Brush the mixture onto the freshly baked, still warm crackers before serving.

2 cups flour
1 TBSP baking powder
1/2 tsp salt
6 TBSP cold unsalted butter, cut into cubes
2 TBSP peanut oil
1 TBSP honey
2 tsp poppy seeds
2/3 cup cold water, possibly a little more or less
2 TBSP unsalted butter, melted
Flaky salt like Kosher or Sea Salt as needed

Steps:

  • 1. Place flour, baking powder, salt in the bowl of a food processor and pulse to combine.
  • 2. Add cubed cold butter and pulse to combine.
  • 3. Add peanut oil, honey, and poppy seeds and pulse to combine.
  • 4. With the motor of the food processor running, slowly drizzle in the water until the dough begins to form a ball. Remove dough from food processor. Let sit for 10 minutes.
  • 5. Preheat oven to 400 degrees F.
  • 6. On a well floured surface roll out the dough to 1/8 inch thickness. Cut your desired shape (commonly circles, squares, or triangles)and place onto baking sheets. With a toothpick poke 5-10 wholes into each cracker.
  • 7. Place in the oven and bake for 8 minutes then rotate the pans and bake for another 2-4 minutes.
  • 8. Remove the crackers from the oven. Working in batches, brush 8-10 crackers at a time with melted butter and immediately sprinkle with the flaky salt.
  • 9. Allow to cool completely and then store in an airtight container or serve.
