I love this creamy caramel frosting, which is an ideal compliment for spice cupcakes. The recipe originated with my grandmother.—Virginia Breitmeyer, Greensboro Bend, Vermont

Yield about 2-1/4 cups.

Number Of Ingredients 5

1 cup packed brown sugar
1/2 cup butter
1/4 cup 2% milk
1 teaspoon vanilla extract
2-1/2 to 3 cups confectioners' sugar

Steps:

  • In a heavy saucepan, combine the brown sugar, butter and milk; bring to a boil over medium heat. Cook and stir for 2 minutes. Remove from the heat; stir in vanilla. Cool to lukewarm. Gradually beat in confectioners' sugar until frosting achieves spreading consistency.

3/4 cup Land O Lakes® Fat Free Half & Half
2 tablespoons Dijon mustard
1 tablespoon all-purpose flour
1/4 teaspoon salt
2 tablespoons sliced green onions
3 tablespoons Land O Lakes® Butter

Steps:

  • Combine half & half, Dijon mustard, flour and salt in 1-quart saucepan. Cook over medium heat, stirring constantly, 3-5 minutes or until mixture begins to thickened. (Do not boil.)
  • Stir in green onions; remove from heat. Add butter, stirring constantly with whisk, until smooth.
  • Serve sauce immediately over chicken breasts or fish.
