Yibin Burning Noodles recipe - Simple Chinese Food image

Yibin Burning Noodles is so popular because the seasoning has less moisture, more oil, and strong flavors such as crushed peanuts and sprouts. The dry incense is wrapped in oil. It is said that it can be ignited by fire. Named Burning Noodles.

I don’t know if anyone has ever tried to actually use fire to ignite the noodles, but this kind of shiny noodles covered with crushed peanuts, sprouts, and chili oil can ignite the appetite of the noodle eater.

Number Of Ingredients 14

400 grams Flour
140 grams Shimizu
2 grams salt
260 grams Sprouts
100 g Minced meat
100 g Ground peanuts
2 pieces Chives
4 tablespoons sesame oil
1 scoop Chili oil
3 tablespoons Soy sauce
2 petals garlic
1 tsp pepper powder
1 scoop Sugar
1 scoop Vinegar

Steps:

  • You can buy noodles or make your own. Use 400 grams of high-gluten flour and add 135-140 grams of water. In order to make the taste smoother, add 2 grams of salt to make the taste very chewy.
  • Use Joyoung JYN-W3 noodle machine to knead the noodles in 3 minutes, and make noodles of various thicknesses with multiple die heads.
  • The sprouts I bought are relatively salty, so they need to be washed several times. After the peanuts are fried, put them in a fresh-keeping bag and crush them with a rolling pin. Cut 2 cloves of garlic and prepare appropriate amount of minced shallots.
  • Sit in a hot oil pan, add the meat and fry until the color changes.
  • Add sprouts, add a little boiling water, and cook for 5 minutes.
  • The fried sprouts minced meat reveals a strong aroma.
  • After the noodles are cooked, let cool water and add 1 tablespoon of sprouts.
  • Pour the sauce on the noodles. The ratio of the sauce is as follows:

    1 tablespoon of chili oil, 4 tablespoons of sesame oil, 2 cloves of minced garlic, 1 teaspoon of sugar, 1 teaspoon of vinegar, 3 tablespoons of light soy sauce

    Add 1 tablespoon of chopped chives and mix well.
