Fajita Burger Wraps Recipe: How to Make It image

1 pound lean ground beef (90% lean)
2 tablespoons fajita seasoning mix
2 teaspoons canola oil
1 medium onion, halved and sliced
1 medium green pepper, cut into thin strips
1 medium red sweet pepper, cut into thin strips
4 flour tortillas (10 inches)
3/4 cup shredded cheddar cheese

Steps:

  • In a large bowl, combine beef and seasoning mix, mixing lightly but thoroughly. Shape into four 1/2-in.-thick patties., In a large skillet, heat oil over medium heat. Add burgers; cook 4 minutes on each side. Remove from pan. In same skillet, add onion and peppers; cook and stir 5-7 minutes or until lightly browned and tender., On the center of each tortilla, place 1/2 cup pepper mixture, 1 burger and 3 tablespoons cheese. Fold sides of tortilla over burger; fold top and bottom to close, forming a square., Wipe skillet clean. Place wraps in skillet, seam side down. Cook on medium heat 1-2 minutes on each side or until golden brown and a thermometer inserted in beef reads 160°.

1 tbsp. of Hy-Vee vegetable oil
4 (6-oz.) Hy-Vee gourmet steakhouse jalapeño pepper Jack burgers
4 slice(s) of Hy-Vee deli sliced pepper Jack cheese
1 c. of Hy-Vee traditional refried beans
4 (12-inch) extra grande flour tortillas
0.25 c. of Hy-Vee canned Mexican-style corn
0.25 c. of Hy-Vee pickled sliced jalapeños
1 c. of Hy-Vee refrigerated homestyle guacamole
1 small red onion
1 medium tomato
0 Hy-Vee shredded lettuce
0 Avocado

Steps:

    Brush oil on grill pan; heat over medium-high heat. Cook burgers for 8 minutes, turning halfway through. Add sliced cheese to burgers. Cover and cook over medium-low heat for 1 to 2 minutes or until cheese is melted and burgers reach 165 degrees.

    To assemble, spread 1/4 cup refried beans in center of each tortilla. Top each with 1 tablespoon corn, 1 tablespoon jalapeños, 1/4 cup guacamole, burger, red onion, and tomato. Fold two sides of the tortilla up and over the burger, then fold the other two sides up and over to enclose burger.

    Cook wrapped burgers in the grill pan over medium-high heat for 5 minutes or until golden brown, turning halfway through. Top with lettuce and avocado to serve.
