Cheeseburger Pockets Recipe: How to Make It image

Ground beef is my favorite meat to cook with because it's so versatile, flavorful and economical. Refrigerated biscuits save you the trouble of making dough from scratch. —Pat Chambless, Crowder, Oklahoma

1/2 pound ground beef
1 tablespoon chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
1 tube (12 ounces) refrigerated buttermilk biscuits
5 slices process American cheese

Steps:

  • Preheat oven to 400°. In a large skillet, cook beef, onion, salt and pepper over medium heat until meat is no longer pink; drain and cool. , Place 2 biscuits overlapping on a floured surface; roll out into a 5-in. oval. Place about 1/4 cup of meat mixture on 1 side. Fold a cheese slice to fit over meat mixture. Fold dough over filling; press edges with a fork to seal. Repeat with remaining biscuits, meat mixture and cheese. , Place on a greased baking sheet. Prick tops with a fork. Bake 10 minutes or until golden brown.

1 lb ground beef, cooked, drained
1/2 cup ketchup
1/4 cup dill pickle relish
1 cup diced American cheese (4 oz)
1 tablespoon yellow mustard
1 can (12 oz) refrigerated Pillsbury™ Grands!™ Original Crescent Rolls (8 Count)
1 teaspoon sesame seed

Steps:

  • Heat oven to 375°F. In 10-inch skillet, mix cooked beef and ketchup. Heat over medium-high heat, stirring occasionally, until hot. Stir in relish, cheese and mustard. Set aside. Separate dough into 4 rectangles. Place on ungreased cookie sheet. Press each to 8x5 inches, firmly pressing perforations to seal.
  • Divide beef mixture evenly among rectangles. Bring ends up over filling, overlapping about 1 inch. Press edges with fork to seal. Brush each with water, and sprinkle with 1/4 teaspoon sesame seed.
  • Bake 13 to 15 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

When you're from Nebraska like I am, you're a die hard "Runza" or as some call them "Kraut Burger" lover. They are dough filled pockets of yummy goodness stuffed with very well seasoned ground beef, onions and cabbage. Many people also used sauerkraut in them. Sometimes along with the cabbage and sometime in place of the cabbage. You can make your own dough, use hot roll mix, Rhodes rolls or just about anything you can stuff the filling in. Here, I decided to use up 2 cans of Grand Biscuits. They are so yummy. Recipe and photos are my own.

BIEROCKS (GERMAN HAMBURGER- AND CABBAGE-FILLED ROLLS ...
This is a staple food in the small Kansas (primarily German-American) town where I was born, and is now a favorite at my house here in Belgium. The recipe comes from my Grandma Rosie. My mother uses a BOX OF HOT ROLL MIX for the roll portion, but as that is not available to me, I have included the hot roll recipe from the Better Homes and Gardens New Cook book. Your yield will depend on the size of rolls you make, but I would estimate about 15 to 20. Preparation time includes time for allowing dough to rise (estimated). Don't let the length of the recipe (or my assembly instructions) spook you, it is really very easy and the assembly is fun for kids, too ! In my opinion they are just as tasty cold as warm from the oven.
