- For the muffins: Rinse the lemon in hot water, pat dry and finely grate 1/2 teaspoon zest.
- Whisk together 1 egg, 90 grams (approximately 1/2 cup) sugar, 10 grams (approximately 2 teaspoons) vanilla sugar, salt, oil and buttermilk. Combine 150 grams (approximately 1 cup) flour, ground almonds, lemon zest and baking powder and stir into the buttermilk mixture.
- Line a muffin pan with paper liners and fill with batter. Bake in a preheated oven at 180°C (convection oven 160°C; gas mark 2-3) (approximately 350°F) for 20-25 minutes. Remove from the oven and transfer to a wire rack to cool completely.
- Meanwhile, for the decorations: Melt the butter and let cool slightly. For the rabbit ears: Whisk together the marzipan, remaining sugar, remaining vanilla sugar, remaining egg, 60 ml (approximately 1/4 cup) milk and butter then gradually stir in the remaining flour. Strain and set aside for 1 hour.
- Pipe the batter into rabbit ear shapes on a baking sheet lined with parchment paper and bake in a preheated oven at 190°C (fan 170°C; gas mark 3) (approximately 210°F) until golden brown, around 4-6 minutes. Carefully loosen the rabbit ears from the parchment and let cool.
- Melt the chocolate and use to decorate the ears. Let harden.
- For the faces: Mix the powdered sugar with the remaining milk and use to pipe eyes and noses on the muffins. Stick the rabbit ears into the muffins, add the sugar pearls for eyes and almonds for teeth. Let set before serving.
