The Good News Bulgogi, the Korean classic, calls for slices of rich beef; this version uses thinly sliced chicken breast, which has barely any fat at all. The chicken is best served with rice and lettuce leaves for wrapping. 1/3 cup low-sodium soy sauce
2 tablespoons toasted-sesame oil
1 tablespoon honey
1 tablespoon unseasoned rice vinegar
1 teaspoon freshly ground pepper
3 scallions, thinly sliced
3 garlic cloves, minced
1 tablespoon finely grated fresh ginger
2 tablespoons toasted sesame seeds
1 1/2 pounds chicken breast cutlets, pounded 1/3 inch thick
Vegetable oil, for brushing

Steps:

  • In a resealable plastic bag, combine the soy sauce, sesame oil, honey, vinegar, pepper, scallions, garlic, ginger and 1 tablespoon of the sesame seeds. Add the chicken and turn to coat. Seal the bag and refrigerate for at least 2 hours or for up to 4 hours.
  • Light a grill or preheat a grill pan. Oil the grates. Remove the chicken from the marinade and brush lightly with oil. Grill over moderate heat, turning once, until lightly charred and cooked through, 5 minutes. Sprinkle with the remaining 1 tablespoon of sesame seeds, thinly slice and serve.

We had Kitchen Crew members raving that this is the best Korean dish they've ever had! Sweet and spicy, this is Bulgogi sauce is an accessible way to begin exploring Korean cooking. Use this for chicken or beef - both are delicious. If there is an issue locating Chinese bean paste, it can be left out. We tried it both ways and it still has tons of flavor without it.

6 tablespoon(s) soy sauce
4 teaspoon(s) sesame oil
2 teaspoon(s) Chinese bean paste
4 tablespoon(s) water
4 tablespoon(s) rice wine or dry sherry
2 teaspoon(s) toasted ground sesame seeds
4 teaspoon(s) finely chopped green onion
2 teaspoon(s) chili sauce
2 small clove garlic, minced
4 teaspoon(s) sugar
- salt, to taste

Steps:

  • Combine soy sauce and sesame oil in a small bowl and stir in Chinese bean paste, water, rice wine, ground sesame seeds, spring onion, and chili sauce.
  • Crush garlic and salt and sugar to a fine paste.
  • Stir in, mix well, and add chicken strips or beef strips. Marinate for several hours.
  • Add chicken or beef to a skillet, along with half the sauce, and stir fry until meat is cooked. Serve over rice.
