SHRIMP TACOS - THE PIONEER WOMAN

I made these a couple of weeks ago because I had a wicked craving for fish tacos and all I had on hand was shrimp.

Number Of Ingredients 6

5 whole Roma Tomatoes
1/2 whole Large Onion
2 whole Jalapenos
Lots Of Cilantro
Lime Juice
Salt To Taste

Steps:

  • Chop jalapenos, tomatoes and onions into a very small dice. (Leave seeds in your jalapenos for a hotter pico). Adjust amount of jalapenos to your preferred temperature. Next, chop up a nice-sized bunch of cilantro. Just remove and discard the long leafless stems before chopping. No need to remove the leaves from the stems completely. Place all of these ingredients together in a bowl and give it a good stir.Squeeze the juice of half of one lime into the bowl. Add salt to taste and stir again.

1 Lb Fresh ground beef
1/4 Cup All purpose flour
1 Tbsp Chili powder
1 Tsp Salt
1/2 Tsp Dried minced onion
1/2 Tsp Paprika
1/4 Tsp Onion powder
Dash Garlic powder
1/2 Cup Water
12 Soft tortillas (6 inch)
1 Cup Shredded cheddar cheese

Steps:

  • "In a medium bowl, combine the ground beef with the flour, chili powder, salt, minced onion, paprika, onion powder and garlic powder. Use your hands to thoroughly mix the ingredients into the ground beef. Add the seasoned beef mixture to the water in a skillet over medium heat. Mix well with a wooden spoon or spatula, and break up the meat as it cooks. Heat for 5-6 minutes, or until browned. The finished product should be very smooth, somewhat pasty, with no large chunks of beef remaining. Heat tortillas in microwave 20-30 seconds, or until warm. Build each taco by spooning 2 to 3 tablespoons of the meat into a warm tortilla. Sprinkle cheese on top. Repeat with remaining ingredients and serve immediately. "
