Buffalo Chicken Egg Rolls Recipe: How to Make It image

One of my favorite slow-cooker recipes is this impressive buffalo chicken egg rolls appetizer. You can wrap the filling in egg roll wrappers and bake, or, for a bite-size version, use smaller wonton wraps. —Tara Odegaard, Omaha, Nebraska

1-1/2 pounds boneless skinless chicken breasts
2 tablespoons ranch salad dressing mix
1/2 cup Buffalo wing sauce
2 tablespoons butter
16 egg roll wrappers
1/3 cup crumbled feta cheese
1/3 cup shredded part-skim mozzarella cheese
Ranch salad dressing, optional

Steps:

  • In a 3-qt. slow cooker, combine chicken, dressing mix and wing sauce. Cook, covered, on low until chicken is tender, 3-4 hours., Preheat oven to 425°. Shred chicken with 2 forks; stir in butter., With a corner of an egg roll wrapper facing you, place 3 tablespoons chicken mixture just below center of wrapper; top with 1 teaspoon each feta and mozzarella cheeses. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining wrapper edges with water. Fold side corners toward center over filling; roll up tightly, pressing at the tip to seal. Place on a parchment-lined baking sheet seam side down. Repeat, adding additional baking sheets as needed, Bake until golden brown, 15-20 minutes. Let stand 5 minutes before serving. Serve warm, with ranch dressing for dipping if desired.

12 hard-boiled large eggs
1/2 cup crumbled blue cheese, divided
2 celery ribs, finely chopped
1/2 cup mayonnaise
1/4 cup finely chopped cooked chicken breast
3 tablespoons minced fresh parsley
1 tablespoon Buffalo wing sauce or 1 teaspoon hot pepper sauce
1/8 teaspoon pepper
Optional: Additional Buffalo wing or hot pepper sauce

Steps:

  • Cut eggs lengthwise in half. Remove yolks, reserving whites. In a bowl, mash yolks and 1/4 cup cheese. Stir in celery, mayonnaise, chicken, parsley, wing sauce and pepper., Spoon into egg whites. Refrigerate, covered, at least 1 hour before serving. To serve, sprinkle tops with remaining cheese and, if desired, drizzle with additional wing sauce.

  • In a medium bowl, combine cream cheese with cheese, chicken, hot sauce, and green onions. Place an egg roll wrapper on a clean surface in a diamond shape. Dampen your finger in water and wet the outside edges of the egg roll wrapper. Add a dollop of the filling crosswise in the center of the bottom half of the wrapper. Fold up bottom half and tightly fold in sides. Gently roll and seal. Repeat with remaining wrappers and filling.  In a large skillet over medium, heat 1/2-inch oil until it starts to bubble. Working in batches, add egg rolls and fry until golden, 1 minute per side. Transfer to a paper towel-lined plate to cool slightly.  Make the dressing, in a small bowl, combine the ranch with the blue cheese and dill. Stir, smashing a bit with a spoon to break up the cheese into the sauce.  Serve warm with dressing for dipping.
