6 Mission Gluten Free Spinach Herb Tortilla Wraps, warmed
5 cups Cauliflower florets
two-thirds cup Buffalo sauce
2 tbsp. Olive oil
half tsp. Salt
half tsp. Pepper
2 cups Cabbage, shredded, or coleslaw mix
third cup Ranch dressing
three-quarters cup Cheddar cheese, grated
4 Green onions, thinly sliced

Steps:

  • Preheat oven to 425 °F. Toss together cauliflower, buffalo sauce, oil, salt and pepper. Arrange in single layer on parchment paper–lined baking sheet; roast for 25 to 30 minutes or until lightly charred and tender.
  • Toss cabbage or coleslaw mix with ranch dressing. Let stand for 10 minutes.
  • Assemble buffalo cauliflower in warm tortillas with ranch coleslaw and cheese. Garnish with green onions.
  • Substitute crumbled blue cheese for cheddar cheese, if desired.

6 cups cauliflower florets
½ cup Buffalo-style hot sauce
2 tablespoons extra-virgin olive oil, plus 1 1/2 teaspoons, divided
? cup shredded Cheddar cheese
1?½ cups fresh corn kernels
1?½ cups finely shredded romaine lettuce
1 medium avocado, sliced
12 (6-inch)s corn tortillas, warmed
½ cup ranch dressing

Steps:

  • Place rack in upper third of oven; preheat to 425°F. Line a large rimmed baking sheet with parchment paper. Combine cauliflower, Buffalo sauce and 2 tablespoons oil in a large bowl; toss well to coat. Spread in an even layer on the prepared baking sheet. Roast until the cauliflower starts to brown and is almost tender, 12 to 14 minutes. Remove from oven and sprinkle evenly with cheese. Continue roasting until the cauliflower is tender, 8 to 10 minutes. Set aside until ready to serve.
  • Heat a large nonstick skillet over medium-high heat. Add corn and the remaining 1 1/2 teaspoons oil; cook, stirring occasionally, until the corn is blistered and charred, about 5 minutes. Remove from heat.
  • Divide the cauliflower, lettuce, corn and avocado evenly among warm tortillas. Drizzle evenly with ranch dressing. Serve immediately.

  • Preheat the oven to 450° and line a large baking sheet with parchment paper. Place chopped cauliflower into a large bowl and set aside. Make batter: In a medium bowl, whisk together flour, salt, pepper, garlic powder, and paprika. Add in milk and stir together until fully incorporated.  Pour batter into the bowl with cauliflower and toss to combine. Spread cauliflower out onto prepared baking sheet in a single layer.Roast for 20 to25 minutes, or until cauliflower is golden and tender.  Transfer roasted cauliflower into a large bowl and pour in buffalo sauce. Again, gently toss together to coat cauliflower. Place back onto baking sheet and into the oven to cook roast again for 10 to 15 minutes. Make ranch slaw: In a medium bowl, toss together slaw and ranch dressing.  Warm tortillas in the microwave and fill buffalo cauliflower. Top with slaw mixture and garnish with cilantro, if desired.
