BUDDY’S TUNA PASTA | JAMIE OLIVER RECIPES

A delicious family meal that’s easy to put together and makes the most of store-cupboard heroes. Double batch the sauce to stash in the freezer for future meals.

1 leek
½ a fresh chilli optional
1 clove of garlic
1 x 400 g tin of quality plum tomatoes
1 x 80 g tin of tuna in spring water from sustainable sources
130 g dried spaghetti
2 sprigs of fresh basil
Parmesan cheese to serve

Steps:

    1. Halve, wash and finely slice the white part of the leek (save the green leafy part for making stock or soup). Halve, deseed and finely chop the chilli (if using), and peel and finely chop the garlic.
    2. Place a large non-stick frying pan on a medium heat with ½ a tablespoon of olive oil. Add the chopped veg to the pan and cook for 5 minutes, or until softened, stirring regularly.
    3. Scrunch in the tomatoes (or break them up with a wooden spoon). Quarter-fill the tin with water, swirl it around to pick up the last bits of tomato and pour it into the pan.
    4. Drain and flake in the tuna, then add a pinch of black pepper and a tiny pinch of sea salt. Bring to the boil, then turn the heat down and leave to simmer, stirring regularly, while you cook your pasta.
    5. Cook the pasta in a large pan of boiling salted water according to the packet instructions, then drain, reserving a mugful of the starchy cooking water.
    6. Add the pasta to the sauce, pour in a little of the reserved pasta water to help the sauce stick, then stir well over the heat.
    7. Use tongs to divide the pasta between your bowls. Pick and finely slice the basil leaves, then scatter over the top, and serve with a good grating of Parmesan cheese.

A firm family favourite. Bashing the chicken before you coat it in flavoured crumbs makes it more tender, means it will cook quicker, and is fun for kids to do. Pair this classic with whatever sides you fancy – a simple chopped salad always goes down well.

150 g wholemeal bread
½ a clove of garlic
2 x 120 g free-range skinless chicken breasts
olive oil
1 lemon
½ a bunch of fresh thyme (15g) optional
2 teaspoons runny honey

Steps:

    1. Tear the bread into a food processor. Peel and add the garlic, then blitz into fairly fine crumbs.
    2. Place the chicken breasts between 2 large sheets of greaseproof paper, then wash your hands.
    3. Whack the chicken breasts with a rolling pin or the base of a large non-stick frying pan to flatten them to about 1cm thick. That’s the fun bit!
    4. Now lift up the chicken, pour half the breadcrumbs onto the paper, put the chicken back and scatter the rest on top. Roughly pat them on, then re-cover with the paper and wash your hands.
    5. Whack the chicken again, to hammer the crumbs into it and help them stick.
    6. Put the pan you used to bash the chicken on a medium heat. Once hot, pour in 1 tablespoon of oil, then fry the crumbed chicken for 3 minutes on each side, or until crisp, golden and cooked through.
    7. Remove the cooked chicken to a board, and squeeze over a little lemon juice. Use the thyme as a brush to spread the honey evenly over the chicken (or drizzle over), then slice the chicken 1cm thick. I like to serve it with a colourful chopped salad.

    1. Pour the flour into a bowl, make a well in the middle, then add the yoghurt. Use your clean hands to mix it together, until you have a dough.
    2. Wash and dry your hands, then dust your work surface and hands with flour. Split the dough into 2 equal pieces. Stretch the dough with your hands or roll it out with a rolling pin to about ½cm thick.
    3. Put a large non-stick frying pan on a medium-high heat – make sure you’ve got an adult around.
    4. Once the pan is hot, carefully add the dough to the dry pan and cook for 2 or 3 minutes, or until golden and puffed up. Use tongs to turn the flatbreads over, and cook for the same time on the other side.
    5. Remove the flatbreads from the pan and spread a little knob of butter on top, moving it about with the back of a spoon until it’s melted. You can have your flatbreads simply with honey or jam, you can top them with eggs, or serve them with a curry. You can do anything with them!
