Buckwheat Cereal with Mushrooms and Onions Recipe … image

Buckwheat is a healthy side dish containing all 9 of the essential amino acids. It's very popular in Europe. Buckwheat is gluten free, as it's not a grain. This recipe is not as quick as a plain basic way to cook buckwheat, but it's so worth it and smells and tastes so good. Serve hot with a small piece of butter on top.

Number Of Ingredients 8

1 cup buckwheat groats
1 tablespoon olive oil, or to taste
1 onion, diced
1 carrot, diced
½ pound mushrooms, diced
1 tablespoon butter, or to taste
2 cups water
salt and ground black pepper to taste

Steps:

  • Rinse buckwheat with cold water in a colander; drain.
  • Heat a skillet over medium heat; cook and stir buckwheat until toasted and fragrant, 5 to 10 minutes. Transfer to a bowl.
  • Heat olive oil in the skillet over medium heat; cook and stir onion and carrot until onion is golden, 5 to 10 minutes. Add mushrooms; cook and stir for 5 minutes more.
  • Melt butter in a pot over medium heat; add buckwheat and stir to coat. Add onion mixture, water, salt, and pepper; bring to a boil. Reduce heat, cover pot, and simmer until liquid is absorbed, about 20 minutes.

I got this off the back of a box of Wolff's medium granulation kasha. I don't know if it would work with other granulations, as I haven't tried it! I'm not sure why it says to serve with milk -- I just treated it as if it were microwaved instant oatmeal, and added a couple of packets of Splenda at the end. Edited to add that the nutrition facts are obviously incorrect -- two tablespoons of dried kasha are 85 calories, so if you use water, that should be the calorie count.

1 dash salt
2/3 cup water or 2/3 cup milk
artificial sweetener (optional)

  • Stir 2 T kasha and a dash of salt into 2/3 cup water or milk in a 2- to 3-cup bowl. Microwave, uncovered, on MEDIUM, 5 to 8 minutes, stirring occasionally until slightly thinner than desired consistency. Let stand 1 to 2 minutes. Serve with milk and favorite sweetener.
