Peanut butter balls dipped in chocolate. They look like buckeye nuts. Absolutely delicious!

Yield 3 dozen

Number Of Ingredients 6

½ cup butter, melted
1 pound confectioners' sugar
1 ½ cups peanut butter
1 teaspoon vanilla extract
2 cups semisweet chocolate chips
1 tablespoon shortening

Steps:

  • Combine the melted butter or margarine, confectioners' sugar, peanut butter and the vanilla together and mix well. Refrigerate for 1 hour or until firm. Roll into 1 inch balls and place on waxed paper.
  • In the top half of a double boiler melt the chocolate chips and shortening, stirring constantly. Use a toothpick to dip balls into the melted chocolate, leaving a small uncovered area so balls resemble buckeyes. Place balls on waxed paper. Use fingers to blend in toothpick holes. Refrigerate until chocolate is firm. Enjoy!

1 (16-ounce) jar creamy peanut butter
1 cup butter or margarine, softened
1 ½ (16-ounce) packages powdered sugar
2 cups (12 ounces) semisweet chocolate morsels
2 tablespoons shortening

Steps:

  • Beat peanut butter and butter at medium speed with an electric mixer until blended. Gradually add powdered sugar, beating until blended.
  • Shape into 1-inch balls; chill 10 minutes or until firm.
  • Microwave chocolate and shortening in a 2-quart glass bowl at HIGH 1 1/2 minutes or until melted, stirring twice.
  • Dip each ball in chocolate mixture until partially coated; place on wax paper to harden. Store in an airtight container.
