Brunoise means that you cut ingredients into small cubes, try to cut everything in the same size; it makes it extra appealing to the eye.

1/2 piece Red pepper (sweet)
1/2 piece Red onion
1/4 piece Lemon
1/2 piece Zucchini
3 twigs Fresh parsley
2 Tbsp Olive oil
1/2 piece Yellow bell pepper
to taste Salt
1 piece Beef tomato

Steps:

  • Finely dice the tomato, zucchini, bell peppers, and red onion, to make a brunoise.
  • Mix all the cubes in a bowl.
  • Chop the parsley and mix through the salad.
  • Squeeze the lemon over the salad and add the olive oil.
  • Season with salt and peppers.

1 oz celery small dice
1 oz carrot small dice
2 oz onion small dice
2 oz egg whites by weight
24 oz cold stock
1 tbsp onion brunoise
1 tbsp carrot brunoise
1 tbsp celery brunoise
tt Kosher Salt

Steps:

  • "1. Whip egg whites to a soft peak. 2. Combine egg whites with mirepoix and ground meat. 3. Mix thouroughly. 4. Put cold stock in a stainless steel pan. 5. Add egg whites mixture to the cold stock. 6. Mix thouroughly. 7. Bring to boil stirring occasionally until raft starts to form. 8. Once raft has formed move pan to the side and allow to simmer for 40 -45 minutes. 9. Strain through several layers of cheesecloth or chinois. 10. Garnish with cooked brunoise vegetables"
