A hearty bake of traditional breakfast favorites with the flavor and romance of Santa Fe.

4 cups frozen southern-style hash brown potatoes
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 cup fresh or frozen whole kernel corn
1 cup frozen stir-fry bell peppers and onions, from 1-pound bag
2 cups shredded Colby-Monterey Jack cheese (8 ounces)
2 tablespoons chopped fresh cilantro
8 eggs
1 1/4 cups milk
1/2 teaspoon salt
1/4 teaspoon ground red pepper

Steps:

  • Spray rectangular baking dish, 11x7x 1 1/2 inches, with cooking spray. Mix potatoes, beans, corn and stir-fry peppers and onions in baking dish. Sprinkle with cheese and cilantro.
  • Beat eggs, milk, salt and red pepper until well blended. Pour evenly over potato mixture. Cover and refrigerate at least 2 hours but no longer than 24 hours.
  • Heat oven to 350°F. Bake uncovered 55 to 60 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before cutting.

2 cooked and crumbled links chorizo
1/2 cut into chunks red bell pepper
1/2 cut into chunks green bell pepper
1/2 cut into chunks yellow bell pepper
1 small sliced onion
8 oz. quartered fresh mushrooms
6 quartered small red potatoes
1 Olive oil
1 Onion powder
2 tbsp. Fajita seasoning
2 eggs fried or poached

Steps:

  • Preheat oven to 375 degrees.
  • Line 2 baking pans with non-stick foil.
  • Cut potatoes and place them in a large bowl and drizzle olive oil over them to coat evenly.
  • Sprinkle them with onion powder and set on foil lined baking pan, spread out.
  • Dust with fajita seasoning and place in oven for 15 minutes.
  • Dump cut up veggies in same bowl potatoes were in and drizzle olive oil on top, tossing them to coat.
  • Place on foil lined baking pan and dust with fajita seasoning.
  • Put veggies in oven after 15 minutes and let them roast with potatoes for 30 minutes, until potatoes are golden.
  • Cook chorizo and drain on paper towels.
  • Mix cooked chorizo, potatoes, and vegetables in large bowl.
  • Top with fried or poached eggs.
