1 box brownie mix
2 eggs
1/4 c. water
1/2 c. vegetable oil
1 sticks butter, melted
1/3 c. brown sugar
1/4 c. white sugar
2 tbsp. milk
1/2 tsp. vanilla
1 1/4 c. flour
1/4 tsp. salt
1 c. mini chocolate chips
1 sleeve Oreos
1 gallon cookies 'n cream ice cream, preferably Haagen Dazs
hot fudge
Crushed Oreos, for topping

Steps:

  • Preheat oven to 325 degrees F and grease a 9" springform pan with cooking spray. In a large bowl, mix all brownie ingredients until well combined. Use half the batter and bake according to package directions. Let cool completely (or freeze for about1 hour). (Use leftover batter however you'd like.) Meanwhile, make cookie dough: In a large bowl, mix butter with brown and white sugar. Add milk and vanilla and stir to combine. Stir in flour and salt. When fully combined, fold in chocolate chips. Press cookie dough in an even layer into bottom of pan. On top of cookie dough, add a single layer of Oreos. Drizzle with hot fudge. On top of that, add first layer of slightly softened ice cream (1/2 gallon). Spread in an even layer. Cover in plastic wrap and freeze immediately, 1 hour. Press brownie on top of the first frozen ice cream layer. Then spread remaining 1/2 gallon ice cream on top. Top with crushed Oreos and a drizzle of hot fudge. Cover loosely with plastic wrap and immediately transfer back to freezer. Freeze until ice cream is hard, 6 hours or overnight.

6 ounces bittersweet or semisweet chocolate, chopped
½ cup butter
1 cup sugar
3 large eggs
1 teaspoon vanilla extract
¾ cup all-purpose flour
½ teaspoon baking powder
½ teaspoon salt
Simple Butterscotch Sauce
1 half-gallon container (8 cups) vanilla ice cream, softened
Simple Hot Fudge Sauce
? cup chopped toasted walnuts

Steps:

  • Preheat oven to 350°. Grease 1 (9-inch) round cake pan and 1 (9-inch) springform pan, and set aside.
  • Combine chocolate and butter in a large saucepan over low heat; cook, stirring frequently, until melted. Let cool to room temperature.
  • Stir sugar, eggs, and vanilla into chocolate mixture. Combine flour, baking powder, and salt. Stir into chocolate mixture.
  • Divide batter evenly between prepared pans. Bake 14 minutes or until toothpick inserted in center emerges with moist crumbs clinging. Cool completely on a wire rack.
  • Pour half of Simple Butterscotch Sauce over cake baked in springform pan. Spoon 4 cups ice cream evenly over butterscotch sauce. Remove cake from round cake pan, and place on top of ice cream, pressing gently. Pour over remaining butterscotch sauce; top evenly with remaining ice cream. Freeze 3 hours or until firm.
  • Run a knife around edge of springform pan, and release cake. Place on a serving plate. Pour Simple Hot Fudge Sauce on top of cake; sprinkle with nuts.
