BROWN SODA BREAD RECIPE - TRADITIONAL IRISH - BORD BIA
This is a delicious, easy and very healthy bread.

Preheat the oven to Gas Mark 6, 200°C (400°F).
Mix the flour, bread soda and salt together in a bowl.
Combine the egg with the buttermilk and honey then mix into the flour. Add a little more buttermilk if the mixture is dry – it should be a soft dough.
Pour the dough into a lightly oiled loaf tin. Sprinkle the sesame seeds or porridge oats over the top of the loaf if using.
Bake for 45-50 minutes. To know when it is cooked simply tap the bottom of the loaf – it will sound hollow when it is fully cooked.
Remove from the tin and wrap in a clean tea towel while cooling. This will keep the crust soft.

- For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a fluted 10- to 12-cup Bundt pan.
- Beat the granulated sugar and butter together in a bowl with an electric mixer until creamy and smooth, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the flour 1 cup at a time, blending well after each addition, until the batter is smooth; stir in the lemon extract. Mix the lemon-lime soda into the batter and pour into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes.
- For the glaze: Beat the confectioners' sugar, milk, lemon-lime soda and extracts together in a bowl with an electric mixer on medium speed until the glaze is smooth.
- Pierce holes in the cake with a skewer. Pour 1/4 cup glaze over the cake. Flip the cake onto a serving plate to remove from the pan, then pour the remaining glaze on top. The cake can be served immediately, but tastes even better the longer it sits.

- Melt the butter in a large pan over a medium heat, add a splash of olive oil and the steak, and lightly brown the meat all over.
- Stir in the Marmite and Worcestershire sauce, turn the heat up to high and keep stirring until all the liquid has evaporated.

- Pre-heat the oven. Rub some oil around the inside of a 1kg/2lb loaf tin or insert a baking liner. Put the flour, bicarbonate of soda, Vitamin C if used, sugar and salt into a bowl, stir to combine and sieve into a mixing bowl. Measure the boiling water into a jug and add the cold water. Add the yogurt and lemon juice, if used, and stir to combine. Pour this into the mixing bowl and stir everything together to make a soft, sticky dough. Drizzle the oil over the sticky dough and using a spatula, turn the mixture a couple of times in the bowl to encourage the formation of a doughy mass. Tip the dough into the prepared tin and smooth the top. Brush some oil over a piece of tin foil. With the oiled side down, cover the tin creating a dome so the bread can rise during cooking. Bake for 55 minutes. Carefully remove the tin foil and bake for a further 10 minutes. Turn the loaf out onto a wire rack. The bottom should sound hollow when tapped. Cool completely before slicing.
