Brown Soda Bread Recipe - Traditional Irish - Bord Bia image

This is a delicious, easy and very healthy bread.

250g wholemeal flour
200g plain white flour
1 teasp. bread soda, sieved
1 teasp. salt
1 egg
350ml buttermilk, approx.
1 teasp. Honey

1 tablesp. sesame seeds or pinhead porridge oats

Steps:

  • Preheat the oven to Gas Mark 6, 200°C (400°F).

    Mix the flour, bread soda and salt together in a bowl. 

    Combine the egg with the buttermilk and honey then mix into the flour.  Add a little more buttermilk if the mixture is dry – it should be a soft dough. 

    Pour the dough into a lightly oiled loaf tin.  Sprinkle the sesame seeds or porridge oats over the top of the loaf if using. 

    Bake for 45-50 minutes.  To know when it is cooked simply tap the bottom of the loaf – it will sound hollow when it is fully cooked.

    Remove from the tin and wrap in a clean tea towel while cooling.  This will keep the crust soft.

1 1/2 cups (3 sticks) unsalted butter, at room temperature, plus additional for greasing
3 cups all-purpose flour, sifted, plus additional for the pan
3 cups granulated sugar
5 large eggs
2 tablespoons lemon extract
1 cup lemon-lime soda, such as 7Up
3 cups sifted confectioners' sugar
1/2 cup milk
3 tablespoons lemon-lime soda, such as 7Up
2 teaspoons vanilla extract
1/2 teaspoon lemon extract

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a fluted 10- to 12-cup Bundt pan.
  • Beat the granulated sugar and butter together in a bowl with an electric mixer until creamy and smooth, about 2 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the flour 1 cup at a time, blending well after each addition, until the batter is smooth; stir in the lemon extract. Mix the lemon-lime soda into the batter and pour into the prepared pan. Bake until a toothpick inserted in the center of the cake comes out clean, about 1 hour 15 minutes.
  • For the glaze: Beat the confectioners' sugar, milk, lemon-lime soda and extracts together in a bowl with an electric mixer on medium speed until the glaze is smooth.
  • Pierce holes in the cake with a skewer. Pour 1/4 cup glaze over the cake. Flip the cake onto a serving plate to remove from the pan, then pour the remaining glaze on top. The cake can be served immediately, but tastes even better the longer it sits.

    1. Melt the butter in a large pan over a medium heat, add a splash of olive oil and the steak, and lightly brown the meat all over.
    2. Stir in the Marmite and Worcestershire sauce, turn the heat up to high and keep stirring until all the liquid has evaporated.
    3. Meanwhile, peel and/or trim and chop the onion, carrots and celery.
    4. Add the chopped veg to the pan with the bay leaf and rosemary sprig and cook over a low heat with the lid on until softened.
    5. Stir in the flour and, after 1 minute, pour in the stock. Season well with sea salt and black pepper.
    6. Bring to the boil, then reduce to a simmer, add the pearl barley and cook gently for 1 hour, then remove from the heat and discard the rosemary sprig (if you like) and bay leaf.
    7. Whiz the soup with a stick blender for a couple of seconds, so it thickens, but there are still some chunky bits, then give everything a good stir.
    8. Serve with hunks of soda bread for dunking.

  • Pre-heat the oven. Rub some oil around the inside of a 1kg/2lb loaf tin or insert a baking liner. Put the flour, bicarbonate of soda, Vitamin C if used, sugar and salt into a bowl, stir to combine and sieve into a mixing bowl. Measure the boiling water into a jug and add the cold water. Add the yogurt and lemon juice, if used, and stir to combine. Pour this into the mixing bowl and stir everything together to make a soft, sticky dough. Drizzle the oil over the sticky dough and using a spatula, turn the mixture a couple of times in the bowl to encourage the formation of a doughy mass. Tip the dough into the prepared tin and smooth the top. Brush some oil over a piece of tin foil. With the oiled side down, cover the tin creating a dome so the bread can rise during cooking. Bake for 55 minutes. Carefully remove the tin foil and bake for a further 10 minutes. Turn the loaf out onto a wire rack. The bottom should sound hollow when tapped. Cool completely before slicing.
