KERRY'S BASIC BROWN BEANS | ALLRECIPES
I love the brown beans at a local diner, but haven't been able to find the right recipe. I finally decided to experiment on my own and here is the result. Basic, good, healthy, and inexpensive comfort food. Topping with shredded country ham or crumbled bacon really takes these basic pinto beans over the top. Also, easily doubled.

Steps:
- Place rinsed and sorted pinto beans in a large pot. Cover with 6 cups of water. Bring to a boil; boil for 2 minutes. Turn off heat and let beans sit for 1 hour.
- Drain beans, rinse, and return to the pot. Add chicken broth and 2 cups of water. Bring to a boil; reduce heat to a simmer and cook, covered, stirring occasionally, until beans are tender and cooked, 1 1/2 to 2 hours. Add additional water if needed.
- While beans are cooking, place oil and 1/2 of the chopped onion in a skillet. Saute over medium-low heat for 5 minutes. Add green chiles and garlic and saute until onion is soft and translucent, 4 to 5 minutes. Remove from heat and set aside. Add mixture to beans after about 1 hour of cooking. Season with salt and pepper.
- Serve in bowls topped with Cheddar cheese, remaining onion, and jalapeno.

SOUTHERN HAM AND BROWN BEANS RECIPE | ALLRECIPES
This is the same recipe my mother's side of the family has been making for years, with my own special touch. Serve it with all of the fixin's. It goes great with cornbread, fried potatoes and fried cabbage.

Steps:
- Place the beans and water in a large stockpot. Add the ham hock, onion and garlic. Season with chili powder, salt and pepper. Bring to a boil, and cook for 2 minutes. Cover, and remove from heat. Let stand for one hour.
- Return the pot to the heat, and bring to a boil once again. Reduce heat to medium-low, and simmer for at least 3 hours to blend flavors. The longer you simmer, the thicker the broth will become. I like to cook mine for about 6 hours.
- Remove the ham hock from the broth, and let cool. Remove the meat from the bone, and return the meat to the stockpot, discarding the bone. Adjust seasonings to taste.

- For the beans: Rinse beans in cool water; pour them into a large pot, cover with water by 2 to 3 inches. Slice the bacon into 1-inch thick pieces and throw it into the pot. Bring to a boil, then reduce heat and cover. Simmer for 2 hours, or until beans are tender. Add additional hot water to the pot as needed. Beans should have a thick broth. Toward end of cooking time, add salt and pepper and season to taste. Don’t over-salt. For a variety try adding chili powder, garlic or Tabasco. Serve in a bowl with cornbread. Can be served with small bowls of grated cheese, chopped onions, chopped fresh jalapenos, sour cream, and/or cilantro.For the cornbread: Preheat oven to 450 F. Heat shortening over medium heat in an iron skillet (10-12 inch size), muffin pan, or other oven safe pan. Combine cornmeal, flour, and salt in a mixing bowl. In a separate bowl, combine buttermilk, milk, and egg. Mix the wet ingredients into the dry ingredients. Add baking powder and baking soda. Stir to combine. Add ¼ cup of the melted shortening, stirring constantly. Pour the batter into the hot pan, smoothing the surface with a spatula. Bake for 20 to 25 minutes or until golden brown on top.
