Broiled Lemon Thyme Pollock Recipe | Epicurious image

Mayonnaise with lemon and thyme gives both extra freshness and a golden-brown crust to delicate, slightly sweet pollock.

Number Of Ingredients 7

4 (6-to 7-ounces) pieces pollock fillet
1/2 cup mayonnaise
2 teaspoons grated lemon zest
1 tablespoon fresh lemon juice
1 tablespoon finely chopped shallot
1 1/2 teaspoons anchovy paste
2 teaspoons chopped thyme

Steps:

  • Preheat broiler. Oil broiler pan.
  • Put fish, skin side down, on broiler pan and sprinkle with 1/4 teaspoon each of salt and pepper (total).
  • Whisk together remaining ingredients and spread evenly over top of fish. Broil 5 to 7 inches from heat until just cooked through, 6 to 8 minutes.

Sauteing sliced garlic in extra-virgin olive oil with a little added lemon juice gives light-tasting pollock a scampi-like flavor.

Number Of Ingredients 9

1/2 lb. green beans, trimmed and halved crosswise
1 tsp. unsalted butter
2 c. fresh corn kernels, cut from 3 medium ears
1/4 tsp. salt
4 skinless pollock fillets (6 ounces each)
1/4 tsp. ground black pepper
4 tsp. extra-virgin olive oil
4 cloves garlic, sliced
2 tbsp. fresh lemon juice

Steps:

  • Preheat the broiler. Coat a broiler pan with cooking spray. Bring a large saucepan of water to a boil. Add the beans, return to a boil, and cook for 2 minutes. Drain. Melt the butter in a large nonstick skillet over medium-high heat. Cook the corn for 3 minutes, stirring occasionally, or until bright yellow. Stir in the beans and cook for 1 minute. Remove from the heat and stir in 1/8 teaspoon of the salt. Keep warm. Place the fillets on the broiler pan. Coat with cooking spray and broil for 8 minutes, or until the fish flakes easily. Place 1 fillet on each of 4 serving plates. Meanwhile, heat the oil in a small nonstick skillet over medium-high heat. Add the garlic and cook for 1 minute, or until lightly browned. Remove from the heat, stir in the lemon juice, remaining salt and pepper, and spoon over the pollock. Serve with the corn mixture.
