BROILED TURKEY, HAM, AND CHEESE SANDWICHES RECIPE
This simple but soul-satisfying recipe is a great way to make use of those Thanksgiving turkey leftovers.

- Arrange an oven rack 5 to 6 inches from the broiler. Heat broiler. In a medium bowl, stir together shallot, vinegar, and 1/4 teaspoon salt; set aside. Line a rimmed baking sheet with foil. Arrange 4 slices of bread on the prepared sheet and spread each with 1 tablespoon mayonnaise and 1/4 teaspoon mustard. Top with 1/3 of the cheese, then the turkey and ham. Sprinkle half the remaining cheese on top and broil until the cheese is melted and the sandwich filling is warm, 3 to 4 minutes. Top the sandwiches with the remaining bread and sprinkle with the remaining cheese. Broil until the cheese is melted, 1 to 2 minutes. Add the oil and remaining 1/2 teaspoon mustard to the vinegar mixture and whisk to combine. Toss with the arugula and grapes and serve with the sandwiches.
