2 tbsp. olive oil
1 1/2 oz. pancetta
2 clove garlic
1/4 tsp. crushed red pepper
2 lb. broccoli florets
salt
1/2 c. water
1 tbsp. fresh lemon juice
Lemon wedges

Steps:

  • In 12-inch skillet, heat 1 tablespoon oil on medium-high. Add pancetta and cook 1 to 2 minutes or until browned and crisp, stirring. With slotted spoon, transfer to paper towels to drain. To same skillet, add garlic and pepper. Cook 10 seconds, stirring, then raise heat to high and add broccoli and 1/2 teaspoon salt. Cook 2 minutes, then add water. Cover and cook 3 to 5 minutes or until most of water evaporates. Meanwhile, in small bowl, with wire whisk, stir together lemon juice and remain­ing 1 tablespoon oil. Drizzle over broccoli and gently toss to evenly coat. Transfer to serving bowl. Top with pan­cetta and serve with lemon wedges.

3 ounces pancetta, finely chopped
2 tablespoons Land O Lakes® Butter
2 large shallots, finely chopped
2 cloves fresh garlic, finely chopped
1 1/2 pounds baby broccoli, ends trimmed
3/4 cup white wine or apple juice
3 tablespoons balsamic vinegar
2 tablespoons sugar
Salt, if desired
Pepper, if desired

Steps:

  • Cook pancetta in 12-inch skillet over medium heat until crispy. Remove from skillet; set aside.
  • Melt butter in same skillet with pancetta drippings until sizzling; add shallots and garlic. Cook until softened.
  • Add baby broccoli and white wine. Cover; cook 5-8 minutes or until broccoli is crisply tender. Add sugar and balsamic vinegar; bring to a boil. Cook 3-5 minutes or until mixture is thickened. Add salt and pepper, if desired.
  • Garnish with crispy pancetta. Serve immediately.
