Broccoli Fried Rice Recipe - Phoebe Lapine | Food & Wine image

Number Of Ingredients 10

1/2 pound broccoli, stems peeled, cut into 1/2-inch pieces
2 tablespoons vegetable oil
1 small yellow onion, cut into 1/4-inch dice
2 cups julienned carrots
2 garlic cloves, minced
2 tablespoons minced peeled fresh ginger
4 cups cooked long-grain white rice (see Note)
4 large eggs, beaten
2 tablespoons soy sauce
1/4 cup coarsely chopped fresh cilantro leaves

Steps:

  • In a large pot of boiling salted water, cook the broccoli until crisp-tender, about 2 minutes. Drain and set aside.
  • In a nonstick wok or large skillet, heat the oil. Add the onion and carrots and stir-fry over high heat until softened and beginning to brown, about 5 minutes. Stir in the broccoli and stir-fry until any excess water has evaporated, about 2 minutes. Add the garlic and ginger, and cook until fragrant, about 1 minute. Add the rice and stir-fry until heated through and beginning to brown, about 3 minutes.
  • Push the fried rice to the side of the skillet to create a well. Pour the eggs into the well and cook, stirring gently, until nearly set. Toss the fried rice with the eggs and stir-fry for 1 minute. Remove the fried rice from the heat. Stir in the soy sauce and cilantro and serve the fried rice in bowls.

boneless skinless chicken breasts

Kosher salt

Freshly ground black pepper

medium onion, diced

large carrot, peeled and diced

clove garlic, minced

riced broccoli

2 tbsp.

low-sodium soy sauce

1/2 c.

frozen peas

large Nellie’s Free Range Eggs, beaten

Thinly sliced green onions, for garnish

Steps:

  • In a large skillet over medium-high heat, heat oil. Add chicken and season with salt and pepper. Cook until golden and no longer pink, 6 minutes. Transfer to a plate. Add onion and carrot to skillet and cook until soft, 5 minutes. Add garlic and cook until fragrant, 1 minute more. Stir in riced broccoli and cook until soft, 3 minutes. Add soy sauce and peas and season with salt and pepper. Cook until peas are cooked through, 2 minutes more.  Push rice to one side of skillet and pour eggs into other side. Scramble until just set, then mix into rice.  Cut chicken breasts into ¾” cubes and stir into rice. Garnish with green onions before serving.

I really think it is one of my favorite stir-fry recipes out there, It is also very flexible...I'm sure you could sub in other veggies for some of the broccoli, like water chestnuts or carrots or mushrooms. Let your imagination run wild :). The original recipe calls for 2 T reduced-sodium soy sauce plus 1/4 t table salt stirred in at the end, but I think it is salty enough as written here.
