Broccoli Cheese Strata Recipe: How to Make It image

This strata recipe is an excellent easy-to-prepare brunch or lunch for two. I enjoy it so much, I often make it for myself and reheat the extra portion in the microwave. —Mina Dyck, Boissevain, Manitoba

1 cup coarsely chopped fresh broccoli
2 green onions, sliced
1 tablespoon water
2 slices white bread, cubed
1/2 cup shredded cheddar cheese
4 eggs
1/2 cup 2% milk
1/2 teaspoon Dijon mustard
1/8 teaspoon dill weed
Dash ground nutmeg
Dash pepper

Steps:

  • In a small microwave-safe dish, microwave broccoli and onions in water on high for 1 minute; drain and set aside. Place bread in a shallow 3-cup baking dish coated with cooking spray. Add broccoli mixture and cheese. , In a small bowl, combine the eggs, milk, mustard, dill, nutmeg and pepper; pour over cheese. Cover and refrigerate overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 25-30 minutes or until a knife inserted in the center comes out clean.

1-inch bread cubes  (about three-quarters of a French loaf)

Butter, for greasing dish

6 oz.

shredded Cheddar (about 1 1/2 cups)

1 c.

halved grape tomatoes

1 c.

frozen broccoli florets

1 1/2 tbsp.

chopped fresh Italian parsley

large eggs

3 c.

milk

1 1/4 tsp.

salt

1/8 tsp.

freshly ground pepper

4 oz.

ricotta cheese (about 1/2 cup)

1 tsp.

herbes de Provence

Steps:

  • Place bread in a buttered 9- by 13-inch baking dish. Top bread with 1 cup Cheddar, tomatoes, broccoli, and 1 tablespoon parsley. In a large bowl, whisk together eggs, milk, salt, and pepper. Pour egg mixture over bread and gently press to soak every cube. Add dollops of ricotta over top. Sprinkle strata with herbes de Provence and remaining Cheddar. Cover and refrigerate for several hours or up to overnight.

  • Beat eggs and milk in a large bowl. Add shredded cheese and Sunny Paris. Stir ciabatta cubes into egg mixture. Steam broccoli for approximately 2 minutes, then set aside.
