You may want to cut this recipe in half or less, I was preparing a salad for 3 different families. This one is great for a Party. Hence the amount of ingredients I used, since it is made with Splenda it does have less calories than a traditional salad and it also has less raisins than what I would normally use for a salad of this size. 1 bunch(es) green onions chopped
1 medium red onion, chopped 1 cup
1 1/2 medium yellow onion, chopped
2 1/2 cup(s) radishes chopped
9 cup(s) fresh broccoli floweretts
8 cup(s) cauliflower, small florets
1 cup(s) golden raisins, plumped
2 cup(s) real bacon bit crumbles
2 cup(s) miracle whip
1 cup(s) mayonnaise
1 1/3 cup(s) apple cider vinegar
2 cup(s) splenda zero calorie sweetener

Steps:

  • Add the raisins to a medium size bowl, cover with water, then cover bowl with saran wrap and Microwave for about 5 minutes. Remove and allow raisins to sit and plump as the water cools.
  • I chose to process the green, yellow and red onions in the food processor. I also processed the radishes in the food processor, so as to avoid having big large chunks in the salad, but you may want large chunks in yours so do what suits you and your family best.
  • For the cauliflower, and Broccoli, I did it by hand, as I didn't want it to be like crumbs, I wanted a bit of texture to the salad.
  • Drain raisins, and allow to cool completely before adding to salad. Using a large bowl add in the broccoli, cauliflower, Bacon, Radishes, and chopped onions and raisins. Stir to mix together.
  • In a separate bowl add the mayonnaise & miracle whip, Splenda, & apple cider vinegar, then whisk to blend together. MY APOLOGIES FOR THE PICTURES NOT BEING AS CLEAR AS THEY USUALLY ARE.
  • Pour Dressing mixture over salad mixture, and stir with a large spoon to mix together. Pour into a large container, and refrigerate to allow the flavors to come together before serving. NOTE: MAY NEED TO STIR SALAD BEFORE SERVING . This salad is very tasty, but not as waist friendly because of the Mayonnaise & Bacon, but I bet you will love it, so eat sparingly & savor every bite. smile

⅔ cup raisins
1 jar Or ½ Cup Crumbled Bacon Real Bacon pieces
½ cup Chopped red onion
½ cup sunflower seeds
½ cup salad dressing
2 tbsp. vinegar
2 tbsp. sugar

Steps:

  • Toss all ingredients a bowl. For best results salad may be assembled the night before you serve it
  • Combine all ingredients for the dresssing. Pour it over the salad just as you are about to serve. (Do not pour it over the salad and let it wait overnigh).
