1 cup egg substitute
¾ cup fat-free cottage cheese
½ cup fat-free sour cream
2 tablespoons butter, melted
¾ teaspoon salt
1?½ cups finely chopped onion
1 (10-ounce) package frozen chopped broccoli, thawed and drained
1 (8 1/2-ounce) package corn muffin mix (such as Jiffy)
Cooking spray

Steps:

  • Preheat oven to 400°.
  • Combine first 5 ingredients in a large bowl. Stir in the onion, broccoli, and muffin mix; stir until well blended. Pour into a 13 x 9-inch baking pan coated with cooking spray. Bake at 400° for 27 minutes or until set.

4 eggs, beaten
3/4 cup margarine, melted

2 (8 1/2 ounce) boxes Jiffy corn muffin mix

Steps:

  • Combine all ingredients in the order listed.
  • Pour batter into a greased 9x13-inch baking dish.
  • Bake at 375 degrees for 25 to 30minutes.
