This easy, cheesy broccoli casserole proves vegetable side dishes need not be boring. Made with sautéed broccoli, garlic and a crispy panko bread crumb topping, this dish is simple enough for a weeknight veggie dish yet elegant enough to serve during the holidays.

3 tablespoons olive oil
8 cups broccoli florets
1/2 cup chopped onion
1 1/2 teaspoons finely chopped garlic
1 can (10.5 oz) cream of chicken condensed soup
1 cup sour cream
2 cups shredded Cheddar cheese (8 oz)
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup Progresso™ Italian panko crispy bread crumbs

Steps:

Heat oven to 350°F. Spray 8-inch (2-quart) square baking dish with cooking spray.
In 12-inch nonstick skillet, heat 2 tablespoons of the olive oil over medium heat. Add broccoli, onion and garlic; cook 5 to 6 minutes, stirring frequently, until broccoli is crisp-tender.
In large bowl, mix soup, sour cream, Cheddar cheese, salt, pepper and broccoli mixture; mix well, and transfer to baking dish. In small bowl, mix bread crumbs and remaining 1 tablespoon olive oil, mixing well. Sprinkle over broccoli mixture.
Bake 40 to 45 minutes or until bubbly and topping is golden brown.

2 pounds boneless skinless chicken breasts, cut into 1-inch pieces
1 small head cauliflower, chopped (about 4 cups)
1 bunch broccoli, chopped (about 4 cups)
1/2 pound medium fresh mushrooms, chopped
1 large onion, chopped
2 medium carrots, finely chopped
1 cup reduced-sodium chicken broth
4 ounces cream cheese, softened
2 tablespoons olive oil
2 teaspoons dried sage leaves
1 teaspoon salt
1/2 teaspoon pepper
1 cup shredded cheddar cheese
Hot cooked brown rice

Steps:

In a 6-qt. slow cooker, combine the first 6 ingredients. In a small bowl, whisk broth, cream cheese, oil, sage, salt and pepper; pour over chicken mixture. Sprinkle with cheese. Cook, covered, on low 4-5 hours or until chicken and vegetables are tender. Serve with rice.
