Made these on a whim for a Super Bowl party and they were a huge hit. These are served cold or room temp so it really makes them easy.

Number Of Ingredients 10

1 lb chopped beef brisket (no sauce)
black pepper (to taste)
6 green onions (chopped)
4 roma tomatoes (chopped)
1/2 bunch cilantro (chopped)
16 flour tortillas (I used small ones)
1/4 cup cream cheese (softened)
1/4 cup mayonnaise (real)
1/8 cup minced garlic
2 teaspoons chipotle hot sauce

Steps:

  • Spread the spread (lol) on 2 tortillas.
  • The following amounts will be to your liking.
  • Top one tortilla with filling in the order listed.
  • Place the other tortilla with the spread on it spread side down onto the filling and lghtly mash.
  • Cut into 4 pie shaped pieces.
  • Repeat.

Flour Tortillas
Shredded Smoked Brisket
Shredded Cheese
BBQ Sauce

Steps:

  • Prepare your Blackstone Griddle with a fresh bit of oil.
  • Shred your brisket to put into the quesadilla, I microwaved mine for about 30 seconds since it had been in the fridge overnight from being cooked the night before.
  • Spread out your tortilla and sprinkle with cheese, then top the cheese with brisket.
  • Top with more cheese and then drizzle with some bbq sauce.
  • Fold the tortilla in half around the meat and cheese.
  • Fire up your Blackstone to low-medium heat and add a bit of oil if necessary.
  • Once your griddle is warm place the folded in half tortilla onto the griddle and allow to cook.
  • When the side of the tortilla on the griddle is starting to brown flip the tortilla over to cook the other side.
  • Remove and serve when the other side is cooked as well.

Fold tortillas in half, pressing gently. Grill tortillas for 6 to 8 minutes or until cheese is melted, turning once. Cut each quesadilla into 3 wedges. Garnish with cornichons, if desired.
