ROSEMARY PORK CHOPS - BRINED RECIPE - FOOD.COM
This is something we tried, because I keep hearing this holiday season about brining being the way to go with all types of meat. I had never brined anything before, but after one taste of these pork chops, I AM SOLD! This recipe is an adaptation from something I found on the Internet, but the original had lots of other ingredients. I wanted my first test for brining to be really simple to tell what brining really does for meat without overloading it with various flavors. This is written exactly as we did it. If you've never brined anything before, TRY THIS, it's incredible!

BRINED, STUFFED AND GRILLED PORK CHOPS RECIPE - FOOD.COM
I have recently started brining for all types of meats. It really does keep the meat juicy and tender, no more dried out meats for me. This may seem like a lot of ingredients, but it comes together quickly and easily and is well worth the effort! I have also used sourdough bread in place of the cornbread with equally good results. If you do not have access to the grill, these can be browned, then finished in the oven to an internal temp of 145 degrees. This is adapted from The Neelys on The Food Network. Prep time does not include brining time.

JUNIPER-BRINED DOUBLE-CUT PORK CHOPS RECIPE - FOOD & WINE
Before cooking the locally raised Berkshire pork they sell, butcher-shop owners Jessica and Joshua Applestone like to brine it for a few hours in a mixture of juniper berries, orange zest and peppercorns to help season the meat and keep it juicy. Then Jessica Applestone recommends cooking it simply with a sprig of rosemary. "Salt, pepper and flame is all you need. Why lose the beauty of the meat by adding more?" she says. The brine works well for a number of pork cuts, including rib chops, loin chops (bone-in or boneless), tenderloin and ribs. Plus:  More Pork Recipes

CIDER BRINED PORK CHOPS RECIPE - WEBMD
Once brined, these chops can be pan-fried, broiled or grilled. The main caution here is not to overcook them. Brining (soaking in a salt solution) helps keep the chops firm and juicy, but even brining will not prevent dry hard chops if overcooked. Bone-in rib chops at least 1 inch thick are the best choice for this recipe, and each one is typically large enough to feed two people. Using the thicker chops and dividing them before serving is much better than trying to cook super-thin chops, which can easily be overcooked before they are browned on the outside.
