This easy, one-pan English Breakfast Tray Bake recipe is the best way to enjoy a traditional egg and meat breakfast.

small cremini mushrooms, halved or quartered if large

Campari or cocktail tomatoes, halved

cloves garlic, finely chopped

1 tbsp.

olive oil

Kosher salt

Pepper

1/2 c.

flat-leaf parsley, chopped

Toast, for serving

Steps:

  • Heat oven to 400°F. On a large rimmed baking sheet, roast sausages and bacon, 15 minutes. In a large bowl, toss mushrooms, tomatoes, and garlic with oil and pinch each salt and pepper. Add to baking sheet and roast 10 minutes.  Make wells among vegetables and crack an egg into each space; return to oven and roast until meat is cooked through and egg whites are opaque throughout, 8 to 10 minutes more. Sprinkle with parsley and serve with toast, if desired.

rashers back bacon

200 g

chestnut mushrooms

225 g

on the vine cherry tomatoes

Small bunch parsley, chopped

Steps:

  • Preheat oven to 180ºC (160ºC fan). Put sausages along with olive oil in a large roasting tin (approx. 28 x 34cm) and cook for 15 mins. Add bacon and cook for a further 5 mins. Add mushrooms stirring to coat them in oil, turn the sausages over, add the tomatoes and cook for a further 5 mins. Make four gaps and crack-in the eggs. Season with salt & pepper and cook for a further 6-8 mins (depending on how you like your egg yolk). Sprinkle over parsley and serve immediately with toasted sourdough and your favourite sauces (we love ketchup and HP).
