Easy Breakfast Strata Recipe: How to Make It image

We start this breakfast casserole the night before so it's ready for the oven the next day. That way, we don't have to deal with the prep and dirty dishes first thing in the morning! —Debbie Johnson, Centertown, Missouri

Number Of Ingredients 8

1 loaf (1 pound) herb or cheese bakery bread, cubed
1 pound bulk pork sausage
1 medium green pepper, chopped
1 medium onion, chopped
1 cup shredded cheddar cheese
6 large eggs
1 teaspoon ground mustard
2 cups 2% milk

Steps:

  • Place bread cubes in a greased 13x9-in. baking dish. In a large skillet, cook and crumble sausage with pepper and onion over medium-high heat until no longer pink, 5-7 minutes. With a slotted spoon, place sausage mixture over bread. Sprinkle with cheese., In a large bowl, whisk together eggs, mustard and milk; pour over top. Refrigerate, covered, overnight., Preheat oven to 350°. Remove strata from refrigerator while oven heats., Bake, uncovered, until a knife inserted in center comes out clean, 30-35 minutes. Let stand 5 minutes before cutting.
    Freeze option: Cover and freeze unbaked casserole. To use, partially thaw in refrigerator overnight. Remove from refrigerator 30 minutes before baking. Preheat oven to 350°. Bake casserole as directed, increasing time as necessary to heat through and for a thermometer inserted in center to read 165°.

There’s no better way to wake up Christmas morning than with festive pancakes. These fluffy gingerbread pancakes give you all the familiar warm spices from your favorite holiday cookie. For a fun activity with kids, use a gingerbread cookie cutter to punch out gingerbread people after the pancakes are cooked. Skip the regular maple syrup and instead, top the pancakes with a simple spiced cranberry maple syrup. Fresh cranberries are cooked down with maple and spices. It’s the perfect combination of tart and sweet with just a hint of citrus to bring all those flavors forward. If you can’t find fresh cranberries, frozen cranberries are a great substitute. Christmas is a time to indulge, so don’t forget the homemade vanilla whipped cream! 1 cup fresh cranberries whole, or frozen cranberries
3/4 cup maple syrup
1/4 cup water
1/2 teaspoon orange zest
1/4 teaspoon ground cinnamon for cranberry syrup
1/8 teaspoon ground allspice for cranberry syrup
1/8 teaspoon ground cloves for cranberry syrup
3/4 cup heavy whipping cream optional
3 tablespoons powdered sugar optional
1 teaspoon vanilla extract optional
2 cups all-purpose flour
6 tablespoons granulated sugar
4 1/2 teaspoons ground ginger
1 tablespoon ground cinnamon for pancakes
1 tablespoon baking powder
3/4 teaspoon salt
3/4 teaspoon ground allspice for pancakes
1/4 teaspoon ground cloves for pancakes
1 1/4 cups whole milk
9 tablespoons unsalted butter melted, divided
3 large eggs
1 1/2 tablespoons unsulphured molasses

Steps:

  • Make spiced cranberry syrup: In a small saucepan, stir together cranberries, maple syrup, water, orange zest, 1/4 teaspoon cinnamon, 1/8 teaspoon allspice, and 1/8 teaspoon cloves. Bring to a boil, then reduce heat to low and simmer until cranberries have broken down and sauce has thickened, about 10 minutes, stirring once or twice throughout and watching so contents do not spill over. Transfer cranberry syrup to a serving dish and set aside.
  • Meanwhile, prepare vanilla whipped cream, if making: In a medium mixing bowl, combine heavy whipping cream, powdered sugar, and vanilla. Use a hand-mixer on medium-high speed or a whisk to whip to stiff peaks. Transfer whipped cream to a serving dish and chill in refrigerator until ready to serve.
  • Make gingerbread pancakes: In a large bowl, whisk together flour, granulated sugar, ginger, 1 tablespoon cinnamon, the baking powder, salt, 3/4 teaspoon allspice, and 1/4 teaspoon cloves.
  • In a separate bowl, combine milk, 6 tablespoons melted butter, the eggs, and molasses. Pour wet ingredients into dry ingredients and stir with a spatula until mostly smooth; some lumps are OK.
  • Heat a nonstick frying pan or griddle on medium-low heat and allow the pan to warm up for 5 minutes. Brush the cooking surface with melted butter, then use a 1/4-cup measuring cup or large spoon to pour 1/4 cup pancake batter onto the pan. Cook until little bubbles appear around the edges of the pancake, about 1-2 minutes, then flip and cook until the underside is lightly browned, 1-2 minutes more. Adjust heat as necessary.
  • If you like, use a 3-inch tall gingerbread cookie cutter to cut out gingerbread people shapes from the pancakes once they're cooked — and be sure to serve the scraps as well! Transfer pancakes to a platter and repeat process until batter is used up. Serve immediately alongside spiced cranberry syrup and vanilla whipped cream, if using.
