Number Of Ingredients 9

1 pound red potatoes (about 3 medium), cut into 1/2-inch cubes
1 medium sweet potato, peeled and cut into 1/2-inch cubes
1 medium onion, chopped
1-1/2 cups sliced smoked turkey sausage (about 8 ounces)
4 garlic cloves, minced
1 teaspoon Creole seasoning
2 cups chopped fresh spinach
1 tablespoon butter
4 large eggs

Steps:

  • Preheat oven to 425°. In a large bowl, toss together the first 6 ingredients. Spread evenly in a greased 15x10x1-in. baking pan. Roast 20-25 minutes or until vegetables are tender, stirring once. Stir in spinach; roast 5 minutes longer., Meanwhile, in a large nonstick skillet, heat butter over medium-high heat. Break eggs, 1 at a time, into pan; immediately reduce heat to low. Cook until whites are completely set and yolks begin to thicken but are not hard, about 5 minutes. Serve over hash.

Pitmaster’s need breakfast too and this Smoked Breakfast Casserole recipe is sure to start the day off right. I combine sausage, eggs, cheese, and a few vegetables (have to keep the doctor happy) for a tasty casserole that cooks right on the pit.

2 pound Pork Sausage
1 cup Onion
1 cup Assorted Color Bell Peppers
1 cup Mushroom
10 Large Egg
2 cup Shredded Cheese
1 cup Sour Cream
1 tablespoon Hot Sauce
1 tablespoon Butter
1 tablespoon Olive Oil
to taste Salt and Pepper
1 package Crescent Dough Sheet

Steps:

  • Brown Pork Sausage (2 pound) over medium heat and drain on paper towel lined platter.
  • Add Butter (1 tablespoon) and Olive Oil (1 tablespoon) to pan and sauté vegetables until tender about 3-4 minutes.
  • Combine sausage and Onion (1 cup), Assorted Color Bell Peppers (1 cup), Mushroom (1 cup) and set aside.
  • In a large mixing bowl, crack Large Egg (10) and whisk. Add Shredded Cheese (2 cup), Sour Cream (1 cup), Hot Sauce (1 tablespoon) and a pinch of Salt and Pepper (to taste). Whisk to combine.
  • Spray 9X11 inch baking pan with cooking spray and spread Crescent Dough Sheet (1 package) in the bottom.
  • Spread sausage and vegetables over the dough evenly and top with egg mixture. Rest the casserole for at least 1 hour in the refrigerator.
  • Prepare Traeger pellet grill or other smoker for cooking at 350 degrees F (140 degrees C). Place casserole on bbq pit and cook for 1 hour rotating pan after 30 minutes for even cooking.
  • When top is brown and edges pull slightly away from pan the casserole is done. Remove from pit and cut into desired serving sizes. Serve with toppings of choice.
