2 lbs ground pork
1 tablespoon salt
2 teaspoons garlic powder
1 teaspoon ground cumin
1 teaspoon thyme
1/2 teaspoon dried sage
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 lb ground beef
3 eggs
2 tablespoons instant minced onion
1/2 lb sharp cheddar cheese, shredded
pepper, to taste

Steps:

  • Preheat oven to 350°F.
  • Mix together thoroughly all ingredients listed under breakfast sausage.
  • In a bowl, combine sausage mixture with ground beef, eggs, onion, cheese & pepper; mix thoroughly.
  • Roll into 1.5" balls or drop by spoonfuls onto cookie sheet. Bake 18-20 minutes.
  • To freeze extra meatballs for up to 6 months: Cool quickly in refrigerator, then place the amounts you will use at one time on sheets of aluminum foil.
  • Wrap tightly and place on cookie sheet (to preserve shape).
  • Leave on baking sheet until frozen, then remove sheet.
  • To reheat: Place meatballs in preheated 350°F oven and bake until hot (30-40 minutes).

These meatballs with spicy Italian turkey sausage, spicy Italian ground turkey, Cheddar cheese, egg, onion, and seasoning are great for snack or in your spaghetti. I use these as a great snack item. I use small snack-size bags, place three in each bag, and freeze. I'll have one serving of three as a snack by removing them from snack bag and reheating them for 60 to 75 seconds.

1 (20 ounce) package bulk spicy Italian turkey sausage
1 (20 ounce) package spicy Italian ground turkey
3 eggs
4 ounces 2%-fat Cheddar cheese
¼ onion, minced
¼ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sausage, ground turkey, eggs, Cheddar cheese, onion, and black pepper in a large bowl; roll into 1 1/2-inch balls. Arrange meatballs onto baking sheets.
  • Bake in preheated oven until no longer pink in the center and the juices run clear, 18 to 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
