1 can (11 oz) refrigerated Pillsbury™ Original French Bread
1 tablespoon chopped pecans
3 tablespoons apricot preserves

Steps:

  • Heat oven to 350°F. On ungreased cookie sheet, shape dough into ring; pinch ends together to seal. Press or roll dough to form 8-inch round, pinching and sealing dough in center. Press out any air bubbles. Press or roll until even thickness. Sprinkle top of dough with pecans; press into dough.
  • Bake 20 to 25 minutes or until edges are golden brown.
  • Meanwhile, spoon preserves into small microwavable bowl. Microwave on High 20 to 30 seconds to soften.
  • Spread preserves over warm focaccia. To serve, cut into wedges.

Cheese or smoked salmon can turn focaccia into breakfast.

Number Of Ingredients 6

1 recipe basic focaccia
2 tablespoons olive oil
1 cup very thin-sliced onion
1 1/2 teaspoons poppy seeds
3 ounces smoked salmon, in thin slices
3 tablespoons sour cream

Steps:

  • Prepare the dough for basic focaccia, setting it to rise as in Step 4, above.
  • While the dough is rising, heat the two tablespoons olive oil in a skillet. Add the onion and saute over medium heat until very lightly browned. Set aside.
  • Once the focaccia dough has risen and has been placed in the pan ready to bake, as in Step 6 above, spread it with the sauteed onions. Sprinkle with poppy seeds.
  • Preheat oven to 500 degrees.
  • Bake 20 to 25 minutes, until browned on the bottom and lightly browned on top.
  • Remove from the oven and cover with slices of smoked salmon. Stir the sour cream to thin it and using a spoon, drizzle it over the smoked salmon. Cut into squares and serve.

BREAKFAST FOCACCIA | JUST A PINCH RECIPES
Focaccia isn't new. I used this recipe in the 70's when I cooked on a guest ranch. I cooked 3 meals a day, so, instead of using the bread part of the recipe I substituted frozen bread dough. Today, whether I do it that way or not, depends on time. Sometimes I sprinkle the apples with maple sugar (my fav) instead of cinnamon and sugar. Like to serve it with Canadian Bacon on the side. And as alway, a bowl of freshfruit.
