If you are like me and love a hearty breakfast of fluffy buttermilk biscuits and a side of scrambled eggs all smothered with sausage gravy, then this recipe is for you. I was looking for a breakfast casserole recipe to make as a treat for the staff at work and was very lucky to find this one on Pinterest. It is from the Just A Pinch Recipes website and was added by Phyllis Lawson. Super easy to throw together and is the epitome of comfort food.

12 ounces of buttermilk biscuit dough
6 eggs
1 (2 3/4 ounce) package peppered gravy mix (makes 2 cups)
1 lb sausage, any flavor (I prefer sage or zesty Italian)
1 cup cheese, shredded (I like to use cheddar)
1/2 cup milk
salt and pepper

Steps:

  • Preheat oven to 350°F Take a 13 x 9 pan and spray with cooking spray (or smear with butter). Cut biscuit dough into 1" pieces and place evenly in the bottom of the pan.
  • Brown the sausage and drain. Scatter the browned sausage over the biscuit pieces, then top with shredded cheese.
  • Whisk the eggs and milk with a pinch of salt and pepper, then pour over the pan.
  • Make gravy according to instructions on package and pour over the pan. Bake for 30 - 45 minutes, depending on how hot your oven runs.
  • Cut and serve. It's delicious warm right out of the oven!

A very fitting title for this breakfast casserole ... it truly is the ultimate. It reminds us of a breakfast bowl that has everything you love about breakfast inside and topped with creamy gravy. Hash browns are the base for the layers of scrambled eggs, bacon, sausage, cheese, and country gravy. When baked, the gooey cheese and gravy layers melt into the other ingredients. This does take a little longer to prepare but it's so worth it.

Number Of Ingredients 8

2 package(s) diced, frozen hash browns (or you can make homemade if you prefer)
2 (rolls) pound(s) pork sausage, mild
2 package(s) bacon, maple flavored
12 large eggs, scrambled
3 cup(s) Fiesta blend cheese, finely shredded
3 package(s) country milk gravy mix (do not buy cheap brands, they taste watery)
3 cup(s) water (for gravy mix)
- salt and pepper

Steps:

  • Mix up the water and gravy mix and start it cooking, making sure to keep stirring it to prevent lumps or scorching.
  • You can deep fry the hash browns in oil until golden brown (I did this once and it turned out really well). Or in a skillet, add some butter and brown the hash browns really well. You have to cook the hash browns a little at the time to get an even browning. You could also do this in a large baking pan (you would have to just stir them to get them evenly browned).
  • Scramble cook the sausage. Set it aside in a strainer, inside a bowl if possible, to strain all the grease off the sausage.
  • Cook the bacon. Crumble it on a paper towel to absorb all the grease.
  • Cook the scrambled eggs and set them aside.
  • In a large deep dish baking pan, (I use the disposable foil pans for lasagna, works great and makes for quick and easy clean up), layer the hash browns, sprinkle a little salt and pepper to taste.
  • Sprinkle a fine layer of cheese on top of the hash browns.
  • Then a layer with half the scrambled eggs, sausage, and bacon. Top that with half of the gravy.
  • Repeat layers and top the gravy with a layer of cheese.
  • Place the casserole in the oven for about 20 minutes to melt the cheese and to bring everything together. Remove from oven and serve warm with your favorite toast, biscuit or bread.
  • Or you could cover the casserole and place it in the refrigerator till the next morning. Place in a 350 degree oven for 30 minutes to warm it up and melt the cheese.
