Breakfast Burger Recipe: How to Make It - Taste of Home image

My husband is big on eggs and bacon, so I wanted to merge his breakfast favorites with a grilled burger for an over-the-top treat. Topping it with my homemade blackberry jam sealed the deal. —Tina Janssen, Walworth, Wisconsin

1 pound ground beef
1 tablespoon Worcestershire sauce
1 teaspoon Montreal steak seasoning
1/2 teaspoon salt, divided
1/2 teaspoon pepper, divided
3 tablespoons butter, softened and divided
8 slices Texas toast
2 tablespoons canola oil
2-1/2 cups frozen shredded hash brown potatoes, thawed
4 large eggs
1/4 cup seedless blackberry spreadable fruit
4 slices American cheese
8 cooked bacon strips

Steps:

  • Combine ground beef, Worcestershire sauce, steak seasoning, 1/4 teaspoon salt and 1/4 teaspoon pepper; mix lightly but thoroughly. Shape into four 1/2-in.-thick patties. Grill burgers, covered, on a greased grill rack over medium heat until a thermometer reads 160°, 4-5 minutes on each side. , Spread 2 tablespoons butter over 1 side of toast slices. Grill, butter side down, until golden brown. Remove burgers and toast from heat; keep warm., Increase heat to high. Heat oil in a large skillet placed on the grill rack. Drop hash browns by 1/2 cupfuls into oil; press to flatten. Sprinkle with remaining salt and pepper. Fry, covered, until golden brown and crisp, 12-15 minutes on each side; add oil as needed. Remove and keep warm., Reduce heat to medium. In same skillet, heat remaining butter. Add eggs; fry over easy., To assemble, spread blackberry spread over 4 slices of toast. Layer each slice with 1 hash brown patty, 1 burger, 1 fried egg, 1 cheese slice and 2 bacon strips. Top with remaining toast slices.

2 tbsp. butter, divided
1 egg
1 slice cheddar cheese
1/2 c. shredded hashbrowns
1 tbsp. ketchup
Burger bun

Steps:

  • Form beef into ball and flatten into burger shaped patty. Using small glass, cut out center of the patty to form a donut shaped burger. Season with salt and pepper. Preheat cast-iron skillet to medium high heat and melt in 1 tbsp. butter. Place burger seasoned side down and season the other side. Cook for 2 minutes on first side then flip. After the flip, crack egg into center of burger. Cover pan with lid and cook until white has set. When burger is done, immediately top with cheese so it will melt. Melt remaining butter in separate pan over medium high heat and add in shredded hashbrowns. Fry until golden brown and crispy. Place bun, cut side down, in pan used to cook burgers. Toast until lightly browned. To build burger, spread ketchup on bottom bun then place burger on top. Top burger with hashbrowns and top bun. Slice burger in half to reveal egg inside.

  • In a medium bowl mix together the mayonnaise, maple syrup, and sriracha sauce until smooth. Set aside. Preheat the oven to 350°F (This is to toast the bagels all at once. If you prefer to use a toaster or a toaster oven you won’t need to heat your conventional oven). Using your hands, combine the lean ground beef and pork sausage in a large bowl. Careful not to overmix (working it too much can give you tough burgers) but try to get the sausage well-incorporated. Form 8 small patties that are as close in size as you can make them. Heat a grill pan or large skillet over medium high heat. Add as many of the patties as you can comfortably fit (I do 3 or 4 at a time). Sear each side for about a minute before turning. If you preheated the oven to toast the bagels you can put them in now. I like to split the bagels and put them face down directly on the rack. Continue cooking the burgers until the centers are cooked through (the sausage in the mixture means you won’t want any pink; they will still be plenty juicy!), about a total of 4 minutes on each side. Add the cheese to each burger and remove them to a plate. Take the bagels out of the oven -- you want the face of each to be golden. In a nonstick skillet cook your eggs. This will be according to your preference. Pictured is a perfect over medium with the whites cooked completely through and the yolk only runny in the very center. Assemble your burgers -- spread the Maple Sriracha Aioli on both sides of each bagel. On the bottom bagel half stack your greens, an onion ring, and a couple of thin tomato slices. Then add the burger. Top it with the fried egg, half a slice of bacon, and then the top half of the bagel. Serve hot.
