Perfect Cast-Iron Skillet Chicken Thighs Recipe | Bon Appétit image

Sophisticated enough for Sunday supper yet quick enough for Wednesday's dinner, this master recipe for baked bone-in chicken thighs is all about technique.

Provided by The Bon Appétit Test Kitchen

Cook Time 35 minutes

Yield 2 to 4 main-course

Number Of Ingredients 3

6 skin-on, bone-in chicken thighs (about 2 1/4 pounds)
Kosher salt and freshly ground pepper
1 tablespoon vegetable oil

Steps:

  • Preheat oven to 475°. Season chicken with salt and pepper. Heat oil in a 12" cast-iron or heavy nonstick skillet over high heat until hot but not smoking. Nestle chicken in skillet, skin side down, and cook 2 minutes. Reduce heat to medium-high; continue cooking skin side down, occasionally rearranging chicken thighs and rotating pan to evenly distribute heat, until fat renders and skin is golden brown, about 12 minutes.
  • Transfer skillet to oven and cook 13 more minutes. Flip chicken; continue cooking until skin crisps and meat is cooked through, about 5 minutes longer. Transfer to a plate; let rest 5 minutes before serving.

Chicken Thighs with Artichoke Hearts and Feta Cheese is made with just a few ingredients and is ready in less than 30 minutes! Perfect with a salad on the side for a quick, weeknight meal!

Number Of Ingredients 8

6 skinless boneless chicken thighs (excess fat removed)
6 oz jar marinated artichoke hearts
1 clove garlic (crushed)
1 tsp oregano
salt and fresh pepper
1/4 cup feta cheese
2 tbsp fresh chopped parsley
lemon juice (optional)

Steps:

  • Combine artichoke hearts along with liquid and chicken and let it marinade about 20 minutes.
  • After it's marinated, drain all liquid.
  • Add garlic, oregano, salt and pepper.
  • Broil on low about 6 inches from the flame for about 10 minutes or until golden brown, turn chicken and cook an additional 8-10 minutes and chicken is fully cooked.
  • Top chicken with feta and broil an additional minute.
  • Remove from oven and top with fresh parsley. Squeeze with lemon juice, if desired!
