3 eggs, beaten
2 cups sugar (feel free to reduce it or substitute with splenda)
1 cup vegetable oil (you can use applesauce instead)
2 teaspoons vanilla
2 cups flour
2 teaspoons ground cinnamon
1 teaspoon salt
2 teaspoons baking soda
1/4 teaspoon baking powder
2 cups zucchini, unpeeled and grated (Spronge the grated zucchini in a clean towel to remove the water)
3/4 cup nutella

Steps:

  • Preheat oven at 350°F Grease a loaf pan of 9 x 5 x 3 inches.
  • In a bowl, put eggs, sugar, oil and vanilla. Beat 2 minutes.
  • Add flour, cinnamon, salt, baking soda and baking powder. Mix with a spatula.
  • Add zucchini and stir well.
  • Pour half the dough in the greased pan. Spread with the Nutella, cover with the remaining dough.
  • Cook in center of oven for 1 hour.

1/2 cup butter, softened
1 cup sugar
2 large eggs, room temperature
1 can (15 ounces) pumpkin
1-1/2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup Nutella, warmed

Steps:

  • Preheat oven to 350°. Grease four 5-3/4x3x2-in. loaf pans., In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and pumpkin. Combine the flour, cinnamon, baking powder, baking soda, ginger, cloves and salt; gradually beat into pumpkin mixture until blended., Transfer 1/2 cup batter to each prepared pan. Drizzle 1 tablespoon Nutella over batter. Repeat layers; cut through batter with a knife to swirl. Bake 30-35 minutes or until a toothpick inserted in center comes out clean., Cool in pans 10 minutes before removing to a wire rack. Cool completely.
