1 can chopped tomato
1/4 cup margarine
1/2 teaspoon salt
1/2 teaspoon pepper
3 -4 slices stale bread
1 tablespoon sugar
1 small onion, chopped
1 small green pepper, chopped

Steps:

  • Mix tomatoes, onion, greenpepper, salt, pepper, margarine, and sugar in saucepan.
  • cook until greenpepper and onion are tender.
  • Add bread.
  • Cook awhile longer on low heat.
  • You can add zucchini to this dish also.
  • Good!

3 cups chopped tomatoes
1 cup minced fresh basil
1/2 cup thinly sliced red onion
1/2 cup olive oil
2 tablespoons cider or red wine vinegar
1/2 teaspoon salt
1/2 teaspoon pepper
1 garlic clove, minced

Steps:

  • In a large bowl, combine the bread, tomatoes, basil and onion. In a small bowl, whisk together the remaining ingredients; drizzle over bread mixture. Cover and let stand for 30 minutes before serving.

Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; divide in half. Shape into two loaves. Place in two greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes., Bake at 375° for 35-40 minutes or until lightly browned. Remove from pans to cool on wire racks.

This is the One(#2) That I recall as a Kid in the early 50's, I got all of these from my recipe Collection of past Family favorites.
