1 cup flour
1 cup rolled oats
3/4 cup brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 cup butter, melted
3/4 cup sugar
2 tablespoons cornstarch
1 cup cold water
1 teaspoon grated orange rind
1 1/2 cups chopped rhubarb
1 cup sliced strawberry
1 cup sliced peeled apple
1 cup blueberries

Steps:

  • Combine flour, oats, brown sugar, cinnamon, and nutmeg. Stir in butter. Press 1/2 of the mixture into a greased 9" square cake pan.
  • In small saucepan combine sugar and cornstarch. Whisk in water and rind until smooth.
  • Bring to boil, reduce heat to med-low and cook 5 min or until thickened and clear, whisking constantly.
  • Toss together fruit. Arrange over base. Pour sauce over top.
  • Sprinkle with remaining flour mixture.
  • Bake in a 350°F oven 50-60 minutes or until fruit is tender and topping is golden. Serve warm.

1 c. hazelnuts (filberts)
1 c. all-purpose flour
6 tbsp. butter or margarine
c. brown sugar
1/4 tsp. ground cinnamon
1/4 tsp. salt
2 Golden Delicious apples
1 lb. strawberries
1 container blueberries
1 container raspberries
3/4 c. granulated sugar
1/4 c. cornstarch
3 tbsp. fresh lemon juice
vanilla ice cream

Steps:

  • Preheat oven to 375 degrees F. Grease 2-quart baking dish. Chop hazelnuts. Transfer to medium bowl; add flour, butter, brown sugar, cinnamon, and salt. With hands, mix until combined and small clumps form. In large bowl, combine apples, all berries, granulated sugar, cornstarch, and lemon juice; transfer to prepared dish. Sprinkle with nut mixture. Bake 45 minutes or until bubbly and golden. Serve warm, with ice cream if desired.
