Few of my family and friends do not like to eat braised pork knuckles, especially ladies who love beauty. When it comes to pork knuckles, they will immediately think of rich collagen, which is delicious and nourishing. Who wouldn't love it? At the same time, it is also a classic home-cooked dish. My mother used to make it for us. Gradually, I found the trick to make it more delicious. I will use my own way to reinterpret the taste of my mother.

2 pcs Trotters
1 capsule Knorr Pork Bone Soup
Right amount Scallions
3 slices ginger
1 piece star anise
1 small piece Cinnamon (15g)
8-10 pcs pepper
4 teaspoons Rice wine (20ml)
5 teaspoons Oil (25ml)
2 teaspoons Soy sauce (10ml)
4 teaspoons Rock sugar 20g
1 small piece Cinnamon (5g)

Steps:

  • All ingredients
  • Wash the pig's trotter, put it in a pot with enough cold water, add the pepper and half of the rice wine, and heat it over high heat
  • Skim the scum, and drain the water after the trotters are completely discolored
  • Put a little oil in the pot, add rock sugar and heat on low heat until the rock sugar melts. Put in the trotters to make it evenly coated with sugar
  • Then add scallions, ginger slices, star anise, cinnamon, soy sauce, dark soy sauce, Knorr pork bone soup, the remaining rice wine and water without ingredients
  • Heat on high heat until the soup boils. After the soup treasure melts, the soup will become thick and mellow
  • Turn to low heat and simmer for about 2 hours. During this time, turn over until the soup thickens.

Comforting Chinese red braised pig trotter

2 pig trotters ( , remove the hair and cut into bite size chunks (resort to batcher))
1/2 tablespoon ginger slices
water as needed
1 green onion
5 Sichuan peppercorn
2 tablespoons cooking wine
1 tablespoon crystal sugar
1 tablespoon cooking oil
2 Dried chili pepper
5 ginger slices
2 green onion
1/2 teaspoon Sichuan peppercorn
2 bay leaves
1/2 tablespoon star anise
1 teaspoon salt
1 tablespoon light soy sauce
1 teaspoon dark soy sauce

Steps:

  • Cut trotter into small sections. Rinse the pig trotter in clean and boiling water. Remove all the hair carefully. Put aside and drain.
  • Bring water to a boil in a large pot and cook the pig trotter for 2-3 minutes. Transfer out and wash under running water. This process can help to remove the odd taste as much as possible. And then in a high pressure cooker or electric cooker or a pot, cover pig trotter with enough water, add ginger slices, green onion, sichuan peppercorn and cooking wine. Cook until you can insert a chopstick into the meat. If you want a softer taste like me, cook it longer. Transfer the pig trotter out and the liquid can be kept as soup stock.
  • Heat up 1 tablespoon oil in wok, put the sugar in wok to stir fry until all the sugar melts and you can see large bubbles. Keep stirring during the process. Pour around 1 cup of hot water. Mix well! You need to be stay away from the wok and do not hesitate when pouring the water. If you do not want to stir fry the sugar color, just add sugar in clay pot and skip oil. The later method only influence the color but not the taste.
  • Prepare a clay pot or another deep sauce pan or wok, fry ginger slices and other spices for 1-2 minutes until aroma. Add pig trotter in, pour some cooking liquid in the previous until the pig trotter is almost covered. Pour the sugar color in the previous step and soy sauce. Heat over high fire with the lid uncovered until there are large bubbles in the pot and the sauce is almost dried up.
  • Sprinkle some green onion and then serve warm!

  • To Marinade Soak the trotters in cold water for over 4 hours or overnight and shave the hair if needed. In a large pot, bring water to boil (adjust amount to cover the trotters) and add coffee powder. Place the pork trotters into the pot. Bring back to boil and let boil for 10 mins. Remove the trotters and rinse with cold water to remove blood and scums. To Cook Place all broth ingredients into a clean pot. Insert all spices into a stock bag and tie tightly to seal, then place into the pot. Mix well for the sugar to rice syrup to dissolve. Add in the clean pork trotters and bring to boil over high heat without cover. Cook for 30 mins, then cover with lid and lower the heat to medium, simmer for 1-2 hrs (depending on size of trotters). Stir from time to time. If the broth gets too thick, add ¼ cup water. Optional: Add 1 tbsp rice syrup for gloss. Remove pork trotters and let cool for 15-30 mins. Remove meat from the bone and slice thin. To Make Spicy Pork Trotters Combine all spicy sauce ingredients and bring to boil over high heat. Then reduce to simmer for 10 mins. Toss the meat in the sauce and spread evenly on a baking tray lined with foil. Broil high for 3-4 mins each side. To Serve Plate half original and half spicy pork trotters onto a serving plate. Sprinkle with sesame seeds and spring onions and garnish with lettuce. Serve with salted shrimp sauce.
