1 egg
2 tablespoons vegetable oil

Steps:

  • Heat waffle iron; grease with vegetable oil or shortening.
  • Stir ingredients until blended. Pour onto center of hot waffle iron. Close lid of waffle iron.
  • Bake about 5 minutes or until steaming stops. Carefully remove waffle.

1-1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs, separated
1 cup 2% milk
1/4 cup butter, melted
Confectioners' sugar and fresh fruit or maple syrup

Steps:

  • In a large bowl, combine the flour, baking powder and salt. In a small bowl, whisk egg yolks, milk and butter. Stir into dry ingredients just until moistened. , In a small bowl, beat egg whites on medium speed until soft peaks form. Fold into batter. , Bake in a preheated waffle iron according to manufacturer's directions until golden brown. Top with confectioners' sugar and fruit or serve with syrup.
