Chicken and Bow Tie Pasta Recipe | MyRecipes image

This creamy bow tie pasta recipe combines chicken, cream of mushroom soup, and cheese for a satisfying main dish. Cooking the pasta in the same water that the chicken was cooked in gives the noodles extra flavor —and using just one pot makes for easy cleanup.

1 quart water
4 skinned and boned chicken breasts, cut into bite-size pieces
8 ounces uncooked bow tie pasta
1 cup chicken broth
1 celery rib, chopped (about 1/2 cup)
1 small onion, chopped (about 1/2 cup)
1 (10 3/4-ounce) can cream of mushroom soup
1 (8-ounce) package pasteurized prepared cheese product, cubed
Garnish: chopped fresh parsley

Steps:

  • Bring 1 quart salted water to a boil in a Dutch oven. Add chicken, and cook 12 minutes or until done. Remove chicken from water with a slotted spoon. Add pasta to water in Dutch oven, and cook 10 minutes or until tender; drain. Keep warm.
  • Heat 1/4 cup broth over medium-high heat in a Dutch oven; add celery and onion, and cook 5 minutes or until tender. Stir in chicken, soup, cheese, and remaining 3/4 cup chicken broth, stirring until cheese is melted. Toss with pasta; garnish, if desired. Serve immediately.

8 ounces (3 cups) uncooked dried farfalle (bow tie) pasta
2 tablespoons Land O Lakes® Butter
12 to 16 ounces boneless skinless chicken breasts, * cut into 1-inch pieces
2 teaspoons finely chopped fresh garlic
1 teaspoon salt
1/4 teaspoon pepper
1 cup chicken broth
1/2 cup Land O Lakes® Half & Half
1 tablespoon cornstarch
1 cup frozen peas, thawed
1 cup grape tomatoes, ** halved
1/4 cup chopped fresh basil leaves
1/2 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions; drain. Set aside; keep warm.
  • Melt butter in 12-inch skillet over medium-high heat until sizzling; add chicken and garlic. Continue cooking 4-5 minutes or until chicken is browned and no longer pink. Stir in salt and pepper.
  • Combine chicken broth, half & half and cornstarch in jar or container with tight-fitting lid. Shake until well mixed; stir into chicken mixture. Continue cooking over medium heat, stirring constantly, 2-3 minutes or until thickened.
  • Stir in pasta, peas, tomatoes and basil. Continue cooking 1-2 minutes or until heated through. Sprinkle with Parmesan cheese. Serve immediately.

  • Cook pasta according to package directions. Drain and set aside. Salt and pepper both sides of the chicken breasts. Heat 2 tablespoons of butter in a large skillet over medium-high heat. Add chicken breasts and cook until deep golden brown on both sides and done in the middle. Remove from the skillet, slice into thin strips, and set aside.Add additional 2 tablespoons of butter to the skillet, followed by the minced garlic. Stir the garlic around the pan to avoid burning, and cook for 1 minute. Pour in wine (or broth), then let it bubble up and reduce for 1 1/2 to 2 minutes. Add half-and-half, cream, and extra salt and pepper, whisking constantly until it's all combined. Allow liquid to heat up and thicken for a few minutes. If it gets too thick, you may thin it with a little chicken broth. When the sauce looks good, remove it from the heat. Add Parmesan to the pan, then throw the hot pasta right on top of it. Toss it a bit. Add the chicken and continue tossing until it's all combined. Again, if it gets too gloopy, splash in a little broth (you may return the pan to low heat if it needs it.)Taste it, adjust seasonings, and top with minced parsley and extra Parmesan.
