2 1/2 cups uncooked bow-tie (farfalle) pasta (6 oz), cooked according to package directions
1 lb lean (at least 80%) ground beef
1/2 cup chopped green onions (8 medium)
1 can (10 3/4 oz) condensed Cheddar cheese soup
1 cup Old El Paso™ Thick 'n Chunky salsa
1 1/2 cups shredded Cheddar-American cheese blend (6 oz)

Steps:

  • In 12-inch nonstick skillet, cook beef over medium-high heat, stirring frequently, until thoroughly cooked. Drain.
  • Reserve 2 tablespoons onions for garnish; stir remaining onions, the soup and salsa into beef. Heat to boiling. Reduce heat to medium-low; cook 5 minutes.
  • Stir in cooked pasta; cook 3 to 5 minutes, stirring occasionally, until thoroughly heated. Sprinkle with cheese; cover and cook just until melted. Sprinkle with reserved 2 tablespoons onions.

head broccoli, cut into florets

1 tbsp.

extra-virgin olive oil

boneless skinless chicken breasts

kosher salt

Freshly ground black pepper

1 c.

milk

1/2 c.

freshly grated Parmesan

6 oz.

cream cheese, softened

3

cloves garlic, minced

Crushed red pepper flakes, for garnish

Steps:

  • In a large pot of salted boiling water, cook bowties according to package directions until al dente. During the last 2 minutes of cooking, add broccoli and cook until bright green. Drain and return to pot. Meanwhile, in a large skillet over medium-high heat, heat oil. Add chicken breasts and season with salt and pepper. Cook until golden, 8 minutes per side. Transfer to a plate to let rest, then thinly slice. Add milk, Parmesan, cream cheese, and garlic to skillet and let melt and thicken, stirring occasionally. Season with salt and pepper. Add cooked bowties and broccoli and chicken to skillet and toss until completely combined. Garnish with crushed red pepper flakes and serve.
