Prep time: 5 MINUTES Sauté: 6 MINUTES ON MEDIUM Pressure cook: 8 MINUTES ON HIGH Release: NATURAL FOR 15 MINUTES Total time: 44 MINUTES SERVES 8 DAIRY-FREE VEGETARIAN OPTION EQUIPMENT Measuring cups and spoons, chef’s knife, can opener, wooden spoon or silicone spatula, paper towels, mixing spoon This is my go-to recipe for baked beans that are sweet, rich, and tangy with a kick of spice. Their creamy texture makes them a perfect side dish, whether you eat them hot or cold.

Number Of Ingredients 9

4 slices bacon (optional)
15 oz kidney beans (1 can rinsed and drained)
15 oz pinto beans (1 can rinsed and drained)
15 oz great northern beans (1 can rinsed and drained)
3/4 cup Water
1/2 cup ketchup
1/3 cup brown sugar (not packed)
1 tbsp ground mustard
1 tsp chili powder

Steps:

  • Add the bacon (if using) to the inner cooking pot. Select Sauté and adjust the heat to Normal or Medium. Cook the bacon for 3 minutes on each side, until almost crisp. Transfer the bacon to a paper towel–lined plate to drain, then chop it into bite-size pieces. Drain the fat from the pot.
  • Return the bacon to the pot and add the kidney beans, pinto beans, great northern beans, water, ketchup, sugar, mustard, and chili powder. Lock the lid into place and turn the valve to “sealing.” Select Manual or Pressure Cook and adjust the pressure to High. Set the time for 8 minutes. When cooking ends, let the pressure release naturally for 15 minutes, then turn the valve to “venting” to quick release the remaining pressure. Unlock and remove the lid and stir well before serving.

A classic Southern-style baked beans recipe made with brown sugar topped with bacon.

Number Of Ingredients 10

2 28-oz. cans cheap-o pork n’ beans
1/2 cup ketchup
1/2 cup barbeque sauce
1/4 cup brown sugar
1 tablespoon yellow mustard
2 teaspoons worcestershire sauce
1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/4 teaspoon Liquid Smoke (optional)
6 slices thick-cut bacon

Steps:

  • Combine ketchup, barbeque sauce, brown sugar, mustard, worcestershire sauce, Liquid Smoke, garlic and pepper in a medium-sized bowl then mix well; set aside.
  • Open each can of beans and pour off all the standing liquid in the top of the can. Discard liquid then add beans to the ketchup mixture. Mix beans gently with the ketchup mixture until thoroughly combined then pour into a shallow 2-quart baking dish.
  • Cut bacon into 1/2 inch pieces then place pieces evenly in a single layer on top of beans.
  • Bake beans, uncovered, at 350 degrees for 1 to 1.5 hours or until bacon is cooked through and starting to crisp. Enjoy!

  • Put the bacon in a large, cold skillet and cook over medium heat until the fat renders and the bacon is almost crisp, about 8 minutes. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Add 1 of the cans of beans with their liquid. Drain and rinse the remaining beans, then add them to the skillet. Add the ketchup, sugar, mustard, vinegar, Worcestershire, 1/2 teaspoon salt and pepper to taste. Bring to a low simmer, then transfer to a small baking dish. Bake uncovered until thickened and bubbly, about 50 minutes. Serve warm.

BOSTON BAKED BEANS WITH BACON RECIPE - BBC FOOD
Most British recipes for Boston baked beans just use a piece of pork belly, but we think it needs some salted or smoked meat to counteract the sweetness, so we include bacon or pancetta. We’ve based the recipe on one our mothers used to make – when they weren’t opening a tin. The alcohol isn’t authentic, but adds flavour (we’ve tried all three). This takes a long time to cook, but once it’s in the oven there’s nothing more to do. It makes quite a large amount and can be reheated the next day for your breakfast, brunch, lunch or supper. We think it makes the most wonderful cooked breakfast or side dish with sausages.
