- Move a rack to the bottom third of the oven and heat the oven to 325 degrees F.
- Spray the insides of the cans with nonstick spray and place set a deep 3-quart oven-safe pot. Begin heating enough boiling water to come halfway up the sides of the cans when poured into the pot.
- In a medium mixing bowl, whisk together the wheat flour, rye flour, cornmeal, baking soda, baking powder, salt and allspice. Add the molasses, buttermilk, vanilla and zest and whisk to combine. Divide the mixture evenly between the prepared cans. Cover the top with a double thickness of aluminum foil and tie securely with string. Pour the boiling water into the pot. Carefully place in the oven and bake for 1 hour and 15 minutes or until the edges of the bread begin to pull away from the sides of the cans. Remove the cans from the pot of water, uncover, place on a cooling rack and cool 1 hour before removing bread from the cans. Serve with baked beans or slice, toast and serve with cream cheese.

- Soak the beans overnight in plenty of fresh cold water.
- Preheat the oven to 140C/275F/Gas 1.
- Drain and rinse, then put in a heavy, ovenproof pan or casserole, with fresh water to cover the beans by about 5cm/2in. Bring to the boil and boil hard for at least 10 minutes. Lower the heat to get a gentle simmer, cover with the pan lid, and simmer for about one hour until the beans are tender but not completely soft. Remove from the heat.
- Cut the pork belly in large 5cm/2in cubes, leaving the rind on and add to the beans. Stir in the brown sugar, black treacle and mustard.
- Press the cloves into an onion and add, with the extra onions, to the pot. Season with pepper, but no salt at this stage. If necessary, add a little hot water so that the beans are covered.
- Replace the lid on the casserole. Bake the beans into the oven to bake for about three hours. Then remove the lid and dragging some of the pork chunks to the top. Return, uncovered, to the oven, for a further hour. Season, to taste, with salt and freshly ground black pepper.
- Serve on it's own, with crusty bread (or on toast), as a snack or light meal.
- The baked beans will keep in the fridge, in a sealed jar or tupperware container, for two weeks. You can also freeze any leftovers.

- The night before you plan to bake your beans, place beans in a large bowl and cover with at least 2 inches of water. Stir in 2 tablespoons kosher salt and let soak overnight, around 12 hours. Preheat oven to 300° and drain beans. In a large dutch oven over medium heat, add beans and cover with 4 cups of water or enough water to completely cover beans. Add salt pork, onion, garlic, molasses, brown sugar, mustard, pepper, soy sauce, and fish sauce. Stir to combine and bring to a boil. Cover dutch oven and place on middle rack of oven and cook until beans are very tender and approaching a caramel brown color, about 3 to 3 ½ hours. Check beans every hour and add water if beans are no longer submerged. Remove any large pieces of garlic or onion from beans, if desired. Return beans, uncovered, to oven and bake until pork begins to caramelize and beans have a slight crust and a brick red tint, about 1 hour more. Remove pot from the oven and allow beans to sit uncovered for 10 to 15 minutes before serving. Sauce will thicken slightly. Season with salt and pepper as necessary.

It’s not called baked potato soup because the potatoes in it are baked. It’s called baked potato soup because it’s topped with shredded cheese, bacon, and green onion, and it tastes like a loaded baked potato. Other hacky hacks for this recipe miss that point and add over an hour to the preparation process by preheating an oven and baking the potatoes, all while hungry stomachs are growling on the sidelines. My version skips that part by adding the raw potatoes directly into the pot with the other ingredients, where they cook in 20 minutes, and the soup is ready to eat in less time than other recipes take just to get the potatoes done.
Also, other clones add way too much flour to thicken the soup—¾ cup! Sure, flour is good at thickening, but it doesn’t add any flavor, so I found a better way. I ended up using just a little flour to make the roux, then later thickening the soup mostly with dehydrated potato flakes, which are used to make quick mashed potatoes. The flakes not only do a great job of thickening the soup, but they also add more delicious potato flavor to the pot.
Top your finished soup with shredded cheese, crumbled bacon, and green onion, and every spoonful will taste like a fully decked-out baked potato.
Finish off your meal with a famous entrée from Outback like Alice Springs Chicken, or Toowoomba Steak.
