BOLIS DE ROMPOPE (MEXICAN EGGNOG POPSICLES) - JUST A PINCH

Steps:
- Pour sugar into milk and stir until completely dissolved. Add rompope and mix until blended well. Place in freezer until well-frozen. Try freezing small quantities in small heavy-duty freezer bags if you also need the portability of the original bolis. Could freeze in little bowls too until you find out the texture and if this could be made in a popsicle stick container too.

- Place four 1/2-cup scoops of ice cream on a waxed paper-lined baking sheet. Freeze for 1 hour or until firm., In a shallow bowl, combine the cornflake crumbs, sugar and cinnamon. Roll ice cream in crumb mixture to coat. Freeze until serving. Drizzle each serving with 1 tablespoon honey.

- Beat egg yolks with an electric mixer until thick and pale. Mix in a little of the warm milk. Pour egg yolk mixture into the saucepan and bring to a boil over low heat. Stir constantly and scrape bottom and sides of saucepan until mixture is thick enough to coat the back of a spoon, 5 to 7 minutes. Remove from heat, fish out cinnamon sticks, and cool to lukewarm. Stir in rum and cool completely, about 2 hours.
