A couple of weeks ago I went to a market and saw some dumplings in one of the stalls. I wanted to buy some but they were so expensive, so I decided I'd just make them myself. The preparation - filling and shaping the dumplings - does take time, but I think it is worth the result.

Yield 30-40 dumplings, 4 serving(s)

Number Of Ingredients 15

200 g ground pork
100 g shrimp, finely chopped or ground using food processor
2 garlic cloves, minced
2 green onions, finely chopped
1 teaspoon soy sauce
1 tablespoon rice wine
1/2 tablespoon sesame oil
1 teaspoon cornstarch
1 teaspoon oyster sauce
1/4 teaspoon ground black pepper
30 -40 wonton wrappers
3 cups chicken stock
salt and pepper, to taste (for the stock)
1 dash mushroom soy sauce (optional, but remember that the stock will look a bit brown)
cauliflower (optional) or carrot, chopped (optional)

Steps:

  • Mix all ingredients except wonton wrappers and stock.
  • Place a teaspoon of meat mixture in the center of wrappers.
  • Enclose the filling - you can shape the wontons into any shape you want. Don't forget to wet the edges of wrappers to ensure the filling is sealed well.
  • Boil the chicken stock over high heat.
  • Reduce heat to low and simmer.
  • Carefully put dumplings into stock and cook, covered, until dumplings float in the surface. Don't crowd the dumplings - you may need to repeat this step for 2-3 times.
  • Add the vegetables along with the last batch of dumplings, if using.
  • Add salt, pepper, or soy sauce to taste.
  • Enjoy!

Crystal dumplings are a very common snack in Guangdong morning tea. They are widely welcomed by the public because of their crystal clearness, soft texture, rich aroma, and unique ingredients.
The most traditional crystal dumpling in Guangdong is the shrimp dumpling. There is a fresh shrimp inside. The original prawn can be vaguely seen through the crystal skin. It is very delicious.

250 grams Crystal Shrimp Dumpling Noodles
50 grams shrimp
150 grams Lean meat
50 grams corn kernels
1 carrot
200 g boiling water
1 teaspoon salt
Right amount lard
Right amount shallot
Right amount Soy sauce
Right amount Cooking oil

Steps:

  • Prepare the fillings such as shrimp, lean meat, green onions, and shrimps for later use.
  • Add 100 grams of Keqishan Crystal Shrimp Dumpling Powder to 200 grams of boiling water to cook. (Remember it is just boiling water)
  • When it is hot, add 150 grams of crystal dumpling powder, salt and lard (edible oil) and stir into a snowflake shape.
  • Knead for more than half an hour to make the surface of the dough smooth, then cover with plastic wrap and let it stand for 5 minutes. (Remember to make the dough for at least 20 minutes, the more you knead, the more tough it is)
  • Take out the dough, knead it into long strips, and use a scraper to cut into even dough pieces;
  • Take out a dough pad and roll out the dough with a rolling pin (as thin as possible).
  • Take out a dumpling wrapper, put in the right amount of filling, and start making crystal dumplings.
  • Put the wrapped dumplings in a pot and steam for about 20 minutes, then they can be out of the pot. (The water in the pot can be boiled in advance, and the bottom of the dumpling plate can be brushed with a layer of cooking oil to prevent sticking)
