Boiled onions have always been a traditional part of my family's Thanksgiving dinner. I always assumed it was a mainstay holiday side dish for evey family in Amerca, but since I've gotten 'out in the world' see that I was mistaken. SO - I'm posting this recipe because boiled onions are AWESOME and I hope to hear from other New Englanders who agree with me. I don't wait for Thanksgiving but serve them several times a year.

Number Of Ingredients 4

2 lbs onions (white, yellow, or vidalia)
1 tablespoon margarine (I use Smart Balance Light) or 1 tablespoon butter
1 tablespoon sugar (adjust according to your preference, if using Vidalia or other sweet onions, can cut the sugar in ha)
salt and pepper

Steps:

  • Wash onions, trim ends and remove outer layer (keep whole).
  • Cook in salted boiling water for 30- 50 minutes (depending on size of onions) until soft and onion layers start to 'come apart'.
  • Drain water, and toss onions w/ margarine, sugar, salt and pepper.
  • You can make this recipe a day or 2 in advance, store in fridge, and heat up in microwave just before serving.

This is a must at my family Thanksgiving feast. I have no idea where my Mom got the recipe, but I suspect it is a New England holdover from the 40's (or earlier!). Sort of bland on their own, these babies really round out the textures and flavors of a holiday meal.

20 ounces boiled baby onions, jarred
1 tablespoon cornstarch
salt and pepper, to taste

Steps:

  • Drain liquid from onions into small saucepan.
  • Bring to a boil, add cornstarch, whisking constantly until thickened.
  • Add onions, salt and pepper to taste and heat through.

I wanted something cooked but cooked fast and the word “potatoes” popped into my mind. I have about a sack full of baby potatoes from my boyfriend’s parents garden so I have to eat in this period a lot more potatoes that I usually eat, because I don’t want them to spoil. This dish was very tasty! Potatoes are great in general, but the combination with onion dipped in paprika was just perfect. I hope you will enjoy it as much as I did.

  • Wash the potatoes and remove any trace of dirt. Do not peel them! Baby potatoes have a very thin peel and it does not bother, on the contrary the texture is very nice. Cut each in four and put them in a pot to boil. Peel the onions and julien cut* them. Pour the oil in a skillet and let it heat. Add the onions and stir occasionally so they wonâ??t stick. After 5 minutes add the paprika, ground pepper, salt and dry rosemary, remove from heat and cover with a lid. Let them settle for another 5 minutes. Mix the potatoes with the onions and thatâ??s it! Enjoy! *How to julien cut : Cut off both the top and root part of the onion and peel it. Then chop the onion in half vertically and cut thin slices of onion on an angle from the outside toward the middle (about a 10 degree angle should be fine). I do all of this with a chef's knife.
